Personally I do not care much for vegan replications of meat or whatever, but I think it's an extremely important part of the movement mostly because we, as humans, tend to connect over food throughout our lives. There have been times where I got really upset about the whole connection between smell and memory fearing that being vegan would take some cherished moments away as I get older as I gave up on a strong trigger. The same thing with taste and texture, you know. So, not only that it matters to offer an alternative to people who grew up in the whole tradition of animal cruelty, such substitutes that "fake" the sensation are giving us a chance to recreate and/or preserve our connections. We alter our memories over time anyway, we can alter them with, say, vegan patties. It's nice to know that the burger experience is still accessible while also being kind and compassionate and all that jazz

I don't understand people who don't understand why vegans try to replicate the texture and taste of animal products with vegan ingredients like mock meats. I went vegan solely for ethical reasons, not because I didn't like the taste of animal products. If I could stop contributing to animal exploitation but eat soy fish that tastes like fish, what is the issue or what's so confusing? What would be confusing is if somebody went "vegan" because they didn't like the taste or texture of animal products and they seek out mock meat products like there's no tomorrow. Plus, if it's weird or wrong to replicate animal flesh using vegan ingredients, is it not also weird or wrong to replicate yogurts, cheeses, butter, eggs, baked goods, mayo, milks, etc etc? It's vegan. It's not weird or wrong.
