Thecha Preparation
5 green chillies
15 - 20 Garlic
2 - 3 Pieces Ginger
20 - 25 Curry Leaves
1 Tsp Salt
1/4th Tsp Hing
1/4th Cup Groundnut Oil
1/4th Cup Coriander
Can be Used As Achar And For Tadka in Almost All Recipes and Can be stored in Fridge for more than 1 month
Maharashtrian Cusine Main Pre Preperation :-
Roasted Peanuts ( can be stored in airtight container at room temperature ) used in curries and bharwa recipes )
Roasted Til ( can be stored in airtight container at room temperature ) used in curries and bharwa recipes )
Roasted Dry Coconut ( can be stored in airtight container at room temperature ) used in curries and bharwa recipes )
For Goda Masala Special Maharashtrian Garam Masala
½ cup coriander seeds
1/4th cup til
½ cup dry coconut
2 tbsp groundnut oil
1/4th Cup Jeera
1/4th cup poppy seeds
1/4th cup khuskhus
1/4th cup stone flower
1 tbsp Black Pepper
1 tsp Shah Jeera
11/2 tsp cloves
3 badi Elaichi
3 star phool
5 green cardamom
2 cinamon sticks
3 tej patta
15 - 20 kashmiri red chillies
1 tbsp haldi
1 tsp hing
1 tsp salt
Can be stored in airtight container 1 year
Usal chi dal
½ cup sprouted moong
½ cup moth dal
2 tbsp groundnut oil
1 tbsp jeera
½ coriander seeds
2 broken red chillies
1/4th cup thecha chutney
3 finely chopped onions
3 finely cut tamatar/ Tomatoes
1/4th cup roasted til powder
1/4th cup fresh coconut paste
2 tbsp Kashmiri red
½ haldi/ turmeric powder
1 tsp coriander powder
½ tsp garam masala
2 tsp goda masala
4 cups hot water
10 min cover & cook dal
Pitla preparation
1 cup besan
2 cup water
2 tbsp thecha chutney
½ haldi
1 tsp namak
2 tbsp groundnut oil
1 tbsp jeera
1 broken red chilli
1/4th cup thecha chutney
1 tsp red chilli
2 tsp goda masala
2 finely chopped onions
1/4th coriander leaves
1 cup water
½ tsp salt
Add pitala batter
Tadka
1 tbsp oil
½ tsp rai
½ tsp hing
Methi chi bhaji
2 tbsp groundnut oil
1 tbsp jeera
1/4th Cup Thecha Chutney
½ cup roasted groundnut crush
1 tsp salt
1 tsp sugar
1 tsp lemon juice
1 bunch methi leaves
1/4th cup fresh coconut
Jawari Bhakri
11/2 cup boiled water
2 cup jawar flour
1 tsp salt

Love this. I make pithla a lot. One quick Northern twist to it. Add a lot of kasoori methi instead of dhaniya. It tastes amazing! Another idea is to use dahi to mix besan instead of water. That makes it a thick kadhi like recipe called आळण.
