@@sunshinehaydeeify How nice of you. I’m really Sorry about your parents. I’m in the same boat in one way. I have multiple health problems and I use a walker too. My youngest son is 47 and recently had 4 strokes and was paralyzed on his left side. He’s now in a wheel chair and struggles to do things. He has a caretaker who comes in and cooks and takes care of him. We live in different states so it’s really difficult. He was a great cook and at one point in his life he was a chef. Toasting the pasta in oil before adding the sauce adds so much flavor. Anyone who has had regular noodle soup, and Mexican "sopa" can tell you that. My Abuela used to toast the pasta brown before adding the sauce / broth. Great food transcends all cultural barriers. That said, I never in a million years thought of doing pasta this way, but now I'm going to kick some culinary butt at the next family meal! Grazie Pasquale!
@delgi9551 Жыл бұрын
I wouldn't say there is a "cutural barrier" between Mexican and Italian food 🤣 mediterranean cuisines and those in central and south America have A LOT in common regarding herbs, flavors, seasonings, spices, etc.

It's a very specific way of pasta cooking, only certain dishes require it and it's called "risottatura". In the end there's not that much difference in the consistency and taste of the final product, it just adds more texture in the pasta and flavour in the sauces.
