Chef one thing I can never understand as a home cooking enthusiast. Why do pros do the horizontal slice on an onion after the vertical ones? Surely it's harder this way round?? Even with razor sharp knives I cannot wrap my head round it. Great recipe btw

Great question! It really is a matter of preference but, the main reason would be that the onion will hold its shape and stay together without the possibility of it slipping if you do the vertical cuts first. It’s for safety and convenience but if you’ve been doing it the other way round and you have no issues, there’s no harm in that. Cheers

One thing I struggle with the spaghetti meal preps is the extra sauce really gets soaked into the pasta after being refrigerated and the reheated dish is too dry, even when spritzing water before microwaving. I’ve recently just started making extra tomato sauce on the side to add on top before reheating. Cheers! Thanks for all you do.

@@chewycornell I usually store and reheat my prepared meals “upside down” with pasta/rice on top of the sauce. Don’t mix the pasta or rice into the sauce before freezing.

I sharpen my knives myself using whetstones. They're honed every day before use on a steel (Honing rod). Ive been meaning to do a sharpening video for years now. Not entirely sure why I haven't done it yet

Ok, Chef. We have a problem with these meal preps. You see I did some research and it became apparent that a lot of food becomes sugar or worse than sugar (starch). Sugar and other foods increase inflamation - meaning it’s not really healthy to eat - RICE (becomes sugar), PASTRY, PASTA, store bought BREAD, anything WITH SEED OILS (Including FRIED MEAL RECIPES (I think frying in seed oils is also unhealthy) and eventually DAIRY PRODUCTS (though I still uze dairy products (cheese) and potatoes in moderation)). This leaves me with only one recipe - Tortilla rolls with chicken (I guess olive oil gives me a lot of energy). BUT PLS HELP! I WANT TO EAT HEALTHY YET IT’S DIFFICULT. I loved your pesto sandwich but it’s made with store bought turkish bread and I do not know how to substitute it for quality ingredients. HELP!! I’M BARELY HANGING ON! YET I HAVE DEEP TRUST IN YOUR SKILLS AND ABILITIES IN KITCHEN! (Also I ordered your book already, I expect some new and tasty recipes in there). Cheers :)

You can easily cut them down by using spray oil instead of tbsp of oil that I use. That’s one of the main reasons calories and fats go higher in recipes. Fats is a total also, including good and bad. Most of them are monounsaturated fats which are good fats. I’ll try my best to cut it as much as possible but I also don’t want to lose flavour or technique which fats are required for cookery methods. 🙌

@@ChefJackOvens Though some people, like many bodybuilders who are on carb cycling diets, are eating only trace fats in their diet - Very high carb, moderate/high protein, and low fat (typically between 20g - 50g for the entire day).

@@money8035 you can adjust any recipe to suit your diet requirements. Look for mince that’s extra lean, cook with as Chef suggests a spray of oil, that being said we do need fats mainly healthy fats in olive oil to transport nutrients especially some vitamins around our bodies. Fats being under 10 grams is usually saturated fats usually found in animal fats which are bad for heart health if you have artery disease or coronary disease. So with that in mind you can follow what chef makes that suits your preference and adjust to your liking. It’s not up to Chef to cook low fat as most of his meals he uses good healthy fats and meat has its own fat. Fat has a bad rep, but it’s important to remember it’s saturated and trans fats that are bad, good healthy olive oil nope, Mediterranean people have around 4tbs a day. I too have around that and my total cholesterol is down. I had to comment as Chef does a great job. It’s actually up to us to make it suit us if it’s not how we want it to be. Myself I cannot eat chilli due to a medical condition so I just always leave anything like that out. Take care and enjoy. 😊
