Love that these meatballs didn't have breadcrumbs, therefore keeping them low-carb! I miss making meatballs because they usually require breadcrumbs. Can't wait to try these out!! And the sauce looks amazing.

I love the simplicity and creativity of this recipe, nice work! Question: the meatballs seemed a bit light in color and because of the way the sauce was made it didn't have a lot of time on the stove (no time actually). Did you feel like it could be lacking a little bit of that flavor of caramelization both on the meatballs as well as in the sauce?

I did this yesterday evening and it turned out delicious!! I made a few adjustments, leaving out onions, garlic and lentils (they are not friendly with my IBS) and adding a teaspoon of curcuma in the meatballs...

Sorted, I was wondering: Could you do a tomato-free take on spaghetti or pizza that tastes like the real thing? I miss both of those things quite a bit, but can't have tomatoes anymore due to an allergy. I haven't had any tomato in over a year now, and it's so difficult when all you want is some really good ketchup, barbecue, or marinara and can't have it!

Hi Chelsea, You could remove the tomatoes from the recipe and up the amount of red peppers you use. Alternatively you could you use homemade pesto

I normally use pesto, but that just doesn't have the mouthfeel or the tang that homemade tomato sauce would. Red peppers are as close as I have gotten so far, but I still haven't been able to spice them correctly to recreate that tomato-like flavor. I wondered if the Sorted crew had any ideas.

Now THIS is what Made Better should be. Not just making things vegetarian or vegan, but making a dish tastier AND healthier without compromising the original dish. Like Ben said at the end, it's leaner but it's still hearty thanks to the lentils and it's still meaty (and looks meaty) for the more picky elements of a household.

Also a great recipe for stuffing extra veg into your diet, while making it invisible to younger children who can sometimes be a little picky. I'd love to see more recipes like this, showing efficient and genuinely delicious ways to improve and lower the cost-per-head of a meal.

Lots of terrific ideas in this video -- well done! If you roast those veggies a little longer, at a higher heat (until there is some caramelization), the flavor will be even richer.

Would love it if Kenwood sorted me out with a mixer. I still need to fix my Kitchenaid, and get it the necessary heads and bowls and such. It was a salvage find, only thing wrong with it is a burnt out phase board. But yeah, between the bowl, the mixer heads, it's gonna get costly to top up eventually.

Alternative to buying the expensive Kenwood gear; Grate your courgette with a cheese grater. Does the same job, just takes a few minutes longer. As for the blender, invest in a £5 stick blender from argos. Just transfer the roast veg into a saucepan and blend away for a few minutes until as a smooth as you like.

Now in 2020 when beef is tough to get, this recipe is a real helper! Think I know what I'm making tonight. (If the 2020 ages badly and you wonder why - with the covid-19 currently still hitting the US, shelves in a lot of places are looking a bit lean in places, and beef has shot thru the roof. Ground chuck at the start of the year was $4.39. It's not hovering between $9-$11lb when the store has it. I'm not going to even think about other cuts of beef... thank god we like eating veggie and other meat options.)

This looks sooo delicious, guys! Spaghetti & meatballs is one of my all-time favorite cheap meals - or even just butter, some salt and a good can of diced tomatoes with juice and some seasoning and you're good to go for dinner!

You blokes forgot the two anchovies that go in the sauce to "meat it up". I also like to carmelize shredded carrots and onions as the very base of the sauce which gives it natural sweetness without adding any sugar which is disgusting and I see too often in book recipes. The roasting is great for deeper flavor but the specifically carmelized onions and carrots really make it. It's a trick I learned in a sailboat galley and the anchovies I learned from Jacques Pepin. The zuchinni is interesting but I usually use olive oil and bread crumbs made from crushed homemade croutons spiced with paprika, sage, oregano, and garlic which really gives the meatballs a great flavor. Adding fennel seed to the meatballs is also really tasty.

Made this today, would definitely squeeze out some of the water from the zucchini before adding it to the meatball mix, it was way too watery and didn't hold their shape once cooked. Tasted pretty good, though! Don't forget plenty of seasoning.

For most of the herbs... keep the soil moist (not too wet), in direct sunlight where possible and by being inside they benefit from the warmth. They don't really last forever unless you replant them... but you certainly get a week or two from them... more than a bag of cut herbs.

Thanksgiving is just around the corner! Literally, because there are only three days left until it's time to put the turkey in the oven. (or chicken/ham if you're like our family) Mashed potatoes are the most favorite on the table, and even though they're really good in taste, they look bland. Maybe you guys can try and spice it up a notch? In more ways than one, maybe in taste or presentation.
