Fellow vegetarian here. It's funny that as I watched this, it was very similar to what I made last night. Add celery, carrots, green and red pepper to the onions. Add chili powder. Add another can of beans (I used pinto beans) and add a can of water and a cup or two of vegetable broth and voila, you have vegetarian chili. :) Oh, and I also chopped up a couple of jalapenos and added those.

That is a top-notch recipe. This will look really stupid to you (and probably lots of other people reading), but I've had a can of kidney beans in my larder for more than a year on the basis that I would get round to making a chili con carne sometime *soon* (soon still hasn't arrived). I'd never thought of using them for something like this! And this recipe is absolutely perfect now that it's getting colder and I can't always be bothered to go out shopping every day. So many, many, many thanks. :-)

I was wondering what to have for dinner this evening, as it’s a hectic day. This looks perfect and I’ve got everything I need. No time wasted shopping.👍 UPDATE I tried this and it’s delicious. I love the bit of piquancy the vinegar provides. It happened that I had only one can of kidney beans on hand, so I used cannellini beans as the second can. I don’t know how much it might have changed the flavor, but it did add a bit of contrasting color.
