It's a classic dish which I've had so many times. I make my own and I have it when I'm out as well and you often find little variations such as the addition of a little pancetta or chorizo and sometimes the egg is stirred into the hot soup to add richness. The origin is, of course, a way of using up stale bread. I love how in Spain and Italy bread is never wasted. A Spanish classic.

Dear Mr. Bevia, I want to sincerely thank you for all the amazing Spanish food recipes you have on KZbin! My 15 year old son is headed to Spain (don’t know what city as yet) for his junior year of High School next summer and I have been trying to get him acquainted with the delicious Spanish cuisine. I tried your Spanish garlic bread soup last night and it was simply delicious. He helped me make it and found it fun to learn. Up until he leaves I will once a week bring him into the kitchen to cook something Spanish. All your KZbin recipes are now my ‘go-to’ menus to follow. Thank you SO very much for your enthusiasm and expertise as I try to educate my son on the delicious cuisine of Spain!! Charles Andrade

Though the person I gave some to as she was curious when I described the recipe to her did not like it. She liked the flavor of the broth, but absolutely hated the bread. But, I liked it. So much so that I've just made the recipe a second time and plan on putting this soup into my regular repertoire.

I think i could smell that as you cooked it ... My grandma would make this soup for me as a child. I use to watch her make it , and i tried remembering the recipe from the way back in 1963 . looks like i pretty much had it down except for the pimenton. and she would use chicken stock. it is a delicious soup .. she also used a different oil STARTER , i think she used somthing called " unto" a roll of white fat log, and was called unn-tow are you famillar with it? It was like a large piece of fat and was salty , it was always wrapped in butcher paper. when it came out of the fridge you knew something good was going to follow .... it went into a lot of dishes she cooked. always a chunk in the soup pot to sweat the vegetables out for a caldo or other ... and if you were really lucky in your dish was this little piece of shriveled up meat morsel from the unn-tow ....
@SpainonaFork3 жыл бұрын
I have never heard of unn-tow, in the part of Spain where I live olive oil is always the base fat when cooking, thanks for the comment! much love
