I genuinely appreciate a KZbin chef who admits when a dish isn't the "moist delicious thang evar." It's cool seeing the process of making something new too. I definitely suggest some fresh chilies though.. will perk that dish right up! And hell, is not trying to be traditional, so just use whatever chili is your favorite locally. Something that really brightens up and compliments that chorizo. Either way, best blessings and luck. Hope Uncle Roger sees ya, but I'm pretty sure he's busy atm so might not..

What I really like about this is taking the idea of a dish from one culture (in this case, "fry leftover rice with stuff") and using the ingredients that are commonly available to you to achieve a similar goal/effect. I also loved the way you're honest about it being a WIP as a recipe.

I will say experimenting to make it all with ingredients that are local to you is super! You are brave enough to try first time on camera, and honest in your assessment of your creation. It's refreshing when you add some insight of each ingredient along with some your reasons for the choice of the final ingredients but you are honest to say maybe you should have tried another ingredient instead. For myself as a home cook often times I question which ingredient may be better so I do like your channel since you often will stop to explain how some ingredients will affect a dish. Thanks to you for all the work you've put into making your videos and also shout out to Vincenzo on the collaborative reviews! Let's see if Uncle Roger picks up on this!

Red, yellow, and orange bell peppers are sweeter than the green ones because green bell peppers are literally that: green, i.e. underripe. If you leave a green bell pepper on the vine, it'll turn one of those colors. And, yes, that means a lot of common hot peppers that are typically green, such as jalapeños, are picked before they're ripe. Fully ripe jalapeños are bright red!

Since you have a ton of rice left and you did the Spanish twist with this one, I got a fun idea. How about making more national egg fried rice twists? As example Mexican fried rice with beans, chilli, corn etc. Swedish fried rice with Köttbullar, seafood, berries etc, German fried rice with Bratwurst, Beer and Hergottbescheißerle etc. I imagine those variations to be pretty interesting, fun and actually not bad :)

I was expecting a fusion dish but I’m glad you made this Spanish egg fried rice because it should be a thing! I think I might have scrambled an egg into the rice but still added that perfectly fried egg on top. I think I would also have sautéed the rice with a bay leaf because bay leaves are one of the best ingredients ever, ever. Excellent recipe and lesson Chef! I want to try it!

I do appreciate that you criticize your own work, and then even say what you would do to change. Like, it’s not common for KZbin chefs to criticize their own work, but then to go on and say what you would do differently? That’s the work of an artist, or someone who’s self aware, and it’s not something we get to see super often from KZbin chefs (or hell, most people), at least not immediately, it usually takes some time, but you figured it out SUPER quick after you made it, which is fantastic and a good mark of character and observation. Sorry if I sound condescending, it’s not my intent, I mean all this genuinely from the heart, and it’s something I aspire for as I grow up and become more of a skilled artist. Major respect. :) I love Spanish cuisine (especially chorizo, HELL YES), and I’m a sucker for fried rice, so I may make this.

I think Uncle Roger will accept this recipe because you're using mostly Spanish ingredients that don't clash with Asian ingredients. "Shallot good, onion for poor people. Red bell pepper for color and sweetness, okay- too many vegetables taste like sad." Uncle Roger I think he will give you a Fuiyoh!

Hold your breath: Cook a regular rice. Cut fresh pineapple. Open up a can of anchoa fish. Poor extra virgin olive oil in a pan. Medium heat. Add the pineapple and achoa. Some pepper (salt not needed). Cook a bit. Add white wine. Let is sit on medium low heat. Heat up you wok. Shortly bake the rice. Let it not color (?). When the wine is evaporated then mix all ingredients together. May be a green on top like spring unions? Or a more neutral herb? I would love to see this dish on a plate in a video. (...story is like this: I was in a bar and this guy says to me: ‘Imagine pineapple and anchoa together’ ....and that was it. It was clear to me we had to do something with it.)

Nigel is pretty lenient at times when people have said it's a personal recipe or something they're doing for the first time. You used Spanish ingredients for a Spanish fried rice. With the adjustments you suggested after tasting, I think it'll be better, but I think it sounds good right now, too, though I admit I've never tasted saffron (that I know of). 10/10 would definitely eat.

We usually use chives or fried onions (like Joshua did) for most of our fried rice dishes. My opinion, this is acceptable. Usually my fried rice are only rice, shallot/onion, garlic, salt, pepper, some additional flavour (something like MSG), thick soy sauce, oyster sauce, some chilies, some cabbage, and a slices sausages/fish cakes.

Unless you have some other underlying medical issue I do not believe any study has been done to show that animal fat is inherently worse for you than vegetable fat. My family has been using it as a staple ingredient for 5 generations and most of us live to be 80 at least. both my grandparents made it to mid 90s on mom's side of family (dad's side died in a car accident in their 70s which is still nice age to go.) and currently ~25 aunts and uncles at least 70 with none dyeing of natural causes so far. I know it's anecdotal but the use of animal fats is incredibly common through out the world and is not causing a reduction of life span, unless of course your body just has problems with animal products like my cousin who has to be vegetarian or throw up blood every meal. The real issue is how inactive people are, we don't really make enough for retirement so theres not a lot of time for us to be sedentary.

I like the process based recipe creation. That is an awesome way to show people with creativity and basic kitchen skills plus good taste buds how to make something good. The huevo frito on top is nice. How about a pair of Huevos Cubanos for the next go ( my sister lived in Sevilla for almost a year, her "mujeres" who hosted her called spanish eggs ( as you did) with the addition of fine chopped garlic to the oil Huevos Cubanos.

@@AdamFloro Yeah it's the same method. The only difference is the size of the pan, but Asians use small deep pans too, if we only want 1 egg. Using a wok for 1 egg at home is a recipe for getting smacked in the butt

Just giving a view on what Uncle Roger may say, I think he may like the dish, but idk if he will call it “egg fried rice” since the egg was not stir-fried with the rice and other ingredients together. Uncle Roger may say this is fried rice with an egg on top, but different to egg fried rice. This is more like a Spanish Nasi Goreng if u will than egg fried rice, since the egg in Nasi Goreng is usually served fried separately on top of the fried rice. Chef Reynold Poernomo just decided to stir-fry an additional egg with the rice, protein and other ingredients since he wanted to have a bigger portion of food and is an ok thing to do against tradition since not too far from tradition especially if the food still tastes good.

It's probably going to take a while until Uncle Roger review this video. I read from his page that he'll be busy with the opening of his new restaurant and he'll be on the road right after for his comedy tour. As an Asian homecook, I think this is a very interesting recipe. I've never tried some of the ingredients used in this recipe so I can't even imagine what it tastes like. I'd give the recipe a try if I could but it's very improbable to find all of the Spanish ingredients here. It looks good and you picked a good rice for fried rice. Love the video, chef James! 👍 I assume the taste didn't really land on what you're aiming but I think you should be more proud of yourself 🙂

I like the jasmin rice you have, the rice I actively ate is the same but the one my parents always brought hat always a good scent. Scented jasmin rice makes you already feel like you´re ready to eat anything. It´s a strong smell but it´s a good smell, and anything you make with that scented rice tastes amazing

Yes on the fish sauce, do 50/50 sambal and Carne de Nora, add a second egg (scrambled and subsequently mixed within) finely diced carrot, and about 2.5-3 chili guindilla and you should be there. Also, of Wok Hei is to fried rice as socarrat is to Paella, does your dish have Paella Hei?

I have made a dish kind of like this. Used some combination of carrot, cabbage and mushroom, which add nicely to this kind of dish. Also used beans. Regular onions. And cooked the egg in with the rice the way Uncle Roger does. I think I used a regular pan, but didn't have any saffron in my cupboard on those particular occasions. I don't think I had the hot paste you used, but I did use a hot sauce that I had on hand that gave it a similar but more spicy and acidic effect.

loved that i saw this, i made a "Mexican fried rice" using what we normally use in a mexican household. I used left over arroz rojo and carne asada de pollo. In preparing i also opted for the shallots and garlic. I did add sesame oil and for my egg i used juevos ahogados. the taste was good, felt like it needed more spice. This Spanish fried rice im going to have to emulate, though i dont think i can get fresh chorizo living here in midwest america. hope Uncle Roger sees this soon.

I really applaud your efforts into this Spanish fried rice. A suggestion for food to make with the jasmine rice. There is a Laotian dish I love called nam khao. It’s deep fried rice salad. Uncle Roger made a video in Minnesota (where I’m from) and made that along with other Lao food like tam mak hoong which is Lao style papaya salad.

Lard is a wonderful fat to fry most anything. If you don't fry potatoes in lard you are missing a huge flavor and texture boost, crispy outside, tender inside, and oh so potatoey. Is that a word? Dunno, but it really makes potatoes, and onions, taste amazing. This recipe looked pretty good, but has room for improvement. Glad to see you thought that, too. Great video!

Ive been making fried frice for a long time and never thought of this. Im gonna have to give it a try, without the expensive seasoning. Id say try to use dried guajilo chile/chipotle(ancho) mix with a water base. I think it might be pretty good flavor and coloring and you can save that expensive saffron for a better use.

In the Philippines, we have "tapsilog", from "TApa" which is well seasoned beef or pork marinated in soy sauce and calamansi, "SInangag" which is garlic fried rice, and "itLOG" which is an egg fried sunny side up. The rice and egg is usually served the way Chef James did it.

This is crazy, I literally made Mexican egg fried rice this morning! lard for cooking oil, chorizo, garlic, salt, and cumin. garnish with Mexican oregano (could use cilantro too just didn't think of it) and white onions. did not use old Sopa aroz because i didnt have any ready so just used white.

Fried rice is a versatile interpretive plate to make. you can make it with whatever you like. I have made it with spam, tocino, chinese sausage, or the traditional chicken, pork, beefe. also i may sometimes use ponzu instead of soy, or ketchup. whatever my kids want at that time.

yes, jasmine rice the best for fried rice, and when make fried rice, sometimes I use capsicum, make more yummy beside garlic and shallot and especially with fresh chilli, yummy... for the meat, use chicken, or beacon or frankfruit cocktail, sometimes spam also , but if there is no meat, is ok, still yummy, becasue of the garlic, shallot, soysauce, bit of sesame oil, pepper and bit salt, is yummy. 😁 Saffron, this is the first time heard about it. Chef James it looks delicious! 😋😋😋 Uncle Roger might lightly roast you but I think overall he will be happy. Uncle title is very possible and here's why... First, you made it clear that it was a Spanish egg fried rice to where it was like the Asian way. Unlike Babish, and I understand he was doing something else on his alternate channel but still he went overboard with his ingredients and ehh!!! Second, you had the basic ingredients correct egg, fried and rice. 😂 But more seriously what you used and how you executed it was excellent. Shallots, sweet chili, spicy and savory chili paste, garlic, and the egg. 😋 Third, you gave an honest explanation and review of your creation and you did not pull a Jamie Oliveoil. You were great with your ingredients and you used what was locally available in an effective way. Overall, he will give it a Fuiyo! P.S. excellent work on the egg!!! I love that because you made a more Korean style of egg fried rice as far as the method. Egg on top! Nice! 🙂 😋😋😋😊😊😊
