This Chinese Braised Pork Belly is known as Dong Po Rou 东坡肉, which is said to be created by Su Dongpo when he was banished to Hangzhou. Traditionally this dish is made by pan-frying the pork belly first then the pork is braised over low heat. However, you know we love to simplify methods without compromising the taste so we took away the pan-frying part and went straight to braising immediately after the pork is blanched. No worries - this doesn't affect the taste of the dish. We hope you will find this simplified method useful in your daily cooking. Please try it and we hope you will go mmm like we did. :)

Melt In Your Mouth Pork Belly (Dong Po Rou 东坡肉) Chinese Braised Pork Belly
Ingredients:
Serves 4 - 6 pax

Blanch the following:

700g pork belly
1 thumb size young ginger (sliced thinly)
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)

Braise the following:
-----
1 stalk of leek (or spring onion / scallion)
30g young ginger (sliced thinly)
50g rock sugar (or brown sugar / white sugar)
2 bay leaves
1 cinnamon stick
1 star anise
250ml Chinese white rice wine (白米酒)
4 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
125ml light soy sauce
4 tablespoons premium dark soy sauce
Enough water to cover the pork

I made this today and it is so amazing! So fragrant and tender, the whole family loves it! I did add a bit of garlic and a tiny dash of 5 spice powder to the braised mixture, the nice smell is out of this world! I even made the thinly sliced version for my dysphagia 73 y.o. father, and he totally loves it, he can eat it with no problem because the pork really melts in the mouth. I have to try this! I usually make kakuni the Japanese way, but after watching a Korean cooking show, I became interested in Dong Po Rou. They seem similar but are cooked a bit differently. I’m curious to see which version I’ll love more!

I tried this today. Smell really nice which bring back memories of eating this dish for the first time at Clementi back in 2014 when i was in Singapore. I follow ur instruction and i like salty flavor but it is way too salty. I am sure it is because of the light and dark SoySauce brand i used. I am using ABC brand. I sought comfort from your channel upon remembering dong po rou. My attempt at crispy Airfryer pork belly failed miserably. If I can salvaged the overfried meat into the dish dong po rou instead , I'll be redeemed.

If I want to sear the pork belly first for some added texture, should I still boil it before I sear it or is it accomplishing the same thing?

I would boil it after searing it, but I don't think you would get much texture out of a short fry in the pan

I tried this recipe already when I was in Taiwan, way back 2006. Akong (Grandpa) teached me how to cook this kind of recipe and it's so delicious. I tried àlso the leg part of the pork and can't resist not to eat.. The softness of the pork makes more yummy.

Hong Shou Rou. This is the best thing you ever put in your mouth. Supposedly Chairman Maos favorite dish and it is easy to see why. I learned to make this in China using bags of brown beer that they sold just for this. Soooo good!
