I tried your recipe, but cheated on the chilly paste by using prepared sambal chilli paste. The stingray tasted just as good as outside hawker fare. Thanks ! Keep it up. I watch quite a lot of your recipes.

Hi Hem Joo. Thanks so much for watching our video. We had leftover. Cooked sambal sotong with some of the chilli and still had some left which we kept in a jar. It was all eaten up after a few days. Hahaha. Very nice Sambal. We will share our sambal sotong recipe tomorrow.

Hi Sam! In Malaysia, apart from Stingrays we usually use a fish called Cencaru (the C sounds like CH-eese), or Jacket fish as we like to call it. Search Ikan Cencaru Bakar, if you want to ee how the dish looks like. Google search shows that it's a type of Torpedo Scad? Never called it by that name, but hopefully you can get some in your area! :)

If you haven't, here's what the uploader replied to some other comment: You can use snapper, Sole fish, or any other fish that you like. There is no hard rule as to what fish you want to use. You don't have to use expensive fish for this though. Expensive fish is best used for steaming. 🙏🏼

Wonderful, I did try my go at just pan frying the damn thing but it got nowhere, the surface was cooked whilst the majority of the meat inside was raw and the taste was complete rubbish. I needed this!

Hi PRIM. You can pan fry but gotta use a cover to cover the fish so that the heat can cook more of the fish. Hope this helps.
