I’m so glad I found this channel. The first recipe I made was oil noodles. That was the first time I’ve tasted something similar to what I had in Taiwan. Never in my life would I ever have thought to make it that way. This prawn omelette looks like something you’d get at a fancy Chinese restaurant where you eat banquet style with a large lazy Susan in the middle. I can finally have a taste of Taiwan and authentic Chinese cooking in the US! Trust me, I’ve tried many Chinese recipe cooking channels and online recipes.

Being classically trained as a Chef I feel reinvigorated with this whole new cooking style. I have become immersed in what I thought I knew and the beautiful clean and clear explanations of techniques and practices. My interest in the culture has exploded with respect. Thankyou

I have some leftover popcorn shrimp and I just looked up "popcorn shrimp omelette" to see if anything existed. I never would have found this recipe in a million years without such a random leftover like "popcorn shrimp". This recipe looks amazing though. I will have to try this. Anything breaded or flour + shrimp is usually amazing.

Frying egg mix with a wok can be so tricky due to the concentrated heat at the bottom and also an overly thick middle. You have to keep swirling it or you will get a burnt spot.
