Must take my hat off to you again Roland for making a difficult recipe look so simple due to the fact u have cut down unnecessary steps. Mine is a Nonya recipe and Nonyas love to agak-agak (eyeball) ingredients. Thank you for taking the trouble to weigh each item and simplify the steps. I can’t wait to try your recipe. Only one comment I have is that if u add a little coconut milk to the gravy it’s ever so tasty (personal choice though)

Hi Jason. Ramen with a twist - you made it sound so good 👍🏻👍🏻 hmm substitute for belacan....you can try to replace it with dried shrimps but it won’t be the same. If you can get hold of shrimp paste, that would be good too. Hope this helps.

Hi Sashi. You can just soak the vermicelli until they are soft. It would take around 20-30 mins for them to get soft. Once they are soft, you can start to use them in your cooking. Have a good Sunday!

Hi Gillian, hope all is well in Canada. We hope to visit Canada one day. You can get belacan from Amazon but if you already have shrimp paste on hand, you can use that too. However, please add lesser amount because shrimp paste from LKK is quite salty. Happy cooking! :o) Have a great weekend!

If only I could get the recipe off the Mee Siam man that went past my house in the '60s. Nevertheless, Prima have done a pretty good job with what Mee Siam should taste like, but the cost of shipping to Australia is ridiculous which is why I'm going to try your recipe. I'll only use 35g of dried chill, though. :)

The mee siam I made is more to nyonya style, I've blue ginger in my chilli paste and also I added rojak prawn paste and coconut milk in the gravy before serving. The rest of my ingredients are the same. I've never try dry mee siam though and hope you can show us. Thanks.
