Chinese Chong Qing fried chicken is one of the most popular dishes in Sichuan China. The dish is easy to make and goes great with rice!
Ingredients
1.5 pound chicken (dark meat)
1 scallion
1 Cup chinese peppercorn
1 star anise
1 cup peanuts(optional)
3 cups red dry chillies
1/2 head of garlic
8 slices of ginger
Corn starch enough to coat
1 tsp sugar
salt to taste
1 tsp chinese five spice
3 tbsp Chinese cooking wine

So, lot of questions about whether to eat the chilies and peppercorn. When I first had this dish, my friends told me to eat the chilies which I did, they then laughed at me for a week, but I enjoyed it. So the answer is...you can if you wanna. Also peppercorn, I like a lot of numbing flavor so I add a lot and it's not too much for me, but you can add less if you wanna, also dont eat peppercorn!

Mike this video made me miss Chongqing so bad. We finally got all of our pictures and videos compiled from when our friends visited us while we lived there and between all the pictures and this video my nostalgia factor is set to 100. So sad I had to leave. I really loved Chonqing so much.

Hi Mike, thanks for this video I'm one of the minority ethnic groups from China but has since lost roots to many years of migration. During this quarantine I've been looking into lots of different dishes from China and currently in the Chong Qing phase (also thanks to my favorite actor Xiao Zhan being from Chong Qing). Will definitely give this a try. Thanks for the recipe!! I tried your Bao recipe and they were DELICIOUS!! I added Chinese sausage to them too, do give it a try when you have the chance. Keep the videos coming!!

What I love to do is keep the leftovers in the fridge overnight and then the next day put them into a pre-heated air fryer for 5 minute and then eat them over rice. A lot of the excess oil drips out, the chicken crisps up very nicely, the flavors all get a chance to blend in and happiness ensues. Alternatively, you can cook the leftovers over rice like you do with leftover KFC in one of your videos. Try it our Mikey. :)

I do love this one because it IS so customizable to a preference. Personally I'd do it exactly the same but maybe add a touch less chilies.

Chillies can help you heal sometimes ... not all illnesses thought just be careful and you can boil the chicken instead of frying it for healther meal

Wish I had these at least a few years ago before my dad passed away. He and I loved trying out foods from other countries. I never bothered to try Chinese cooking because everything always made it look complicated :/ *Side, immature note: I'm Like number 69 bahahaha*

You can use mild chilies and only the amount you can handle. Chinese food is adaptable

Most of us Chinese can't deal with many real authentic Sichuan dishes either because they're hellish hot. Not every Chinese person is from Sichuan obviously. Sometimes we manage to eat the milder ones only to find the rear hole is on fire the next day. Not sure it's worth it.
