This recipe was inspired after eating dim sum pork ribs at a restaurant in Portland, OR a few years ago - gosh, I guess it was more like a decade ago. I love the flavors of the dim sum pork ribs but I didn't want the texture. So what else was I to do but to come up with my own recipe.
Now of course I would make it with a bit more spice - who am I kidding - a lot more spice than the inspirational dim sum pork ribs. I experimented and had many failures along the way before I landed on the process for delivering the inside tenderness as well as the outside crispiness and also packed with the ensemble of spices and aromatics.
Throughout the experimental phase, I learned the inner tenderness and crispy exterior is achieved in two cooking phases. The first phase is precooking the short ribs in boiling seasoned water. The reason for the seasoned water is pork does not come to the table with lots of its own built in flavors but rather, pork gathers and builds its flavor from the seasonings added to it.
The second phase of the cooking process follows my typical wok infusion of the various aromatic of garlic, ginger, yellow onions, green onions, and jalapeños.

Ingredients:
1/2 yellow onion [cut into wedges]
3-4 cloves of garlic [finely minced]
1-2 jalapeños [cut into rounds]
2 teaspoons fresh ginger [finely minced]
1 green onion [cut into diagonals]
1/2 lb short pork ribs [cut into 1" cubes]
1 teaspoon salt
1 tablespoon oil
1 teaspoon each of course salt & fresh ground pepper [to your liking]
Cooking:
1) place pork ribs in a single layer in a sauce pan
2) cover port with water [just enough water to cover the pork]
3) add 1 teaspoon salt
4) add half of the yellow onion wedges
5) add a handful of jalapeño rounds
6) boil on medium heat for about 20 minutes
7) drain and set aside [remove the jalapeño and onion]
8) heat 1 tablespoon oil in wok [or frying pan]
9) add remaining onion wedges
10) add garlic
11) add ginger
12) stir fry for about 30 seconds
13) add cooked pork ribs. Stir fry until pork begins to turn brown
14) add jalapeño and stir for another minute
15) add the course salt and fresh ground pepper
16) stir fry 30 seconds
17) add green onions (if desired)
18) stir fry 30 seconds
19) serve warm
That's it. A simple yet tasty dish with rice or a vegetable dish. This is also great on it's own as a small plate.
