I get a lot of requests from college students for fast, cheap, and easy recipes, and I can’t think of a more perfect offering than this Spicy Tuna Rice Bowl. Having said that, this is one of my favorite things to eat, and I’d enjoy it regularly even if it were slow, expensive, and hard to make.

Needs a handful of dry-roasted unsalted peanuts and a generous sprinkling of sesame seeds. Also garlic. Can also throw the peanuts in with the rice while it's cooking.

That rice was a soggy mess. John shoulda used short grain rice if he wanted it sticky. NO: one doesnt need a heavy duty pan for boiling rice YES: one must wash and soak long grain rice for at least 30 minutes to maximize light, seperate, fluffy texture. My 2 cents. :)

@@Sandra27HK imao, you might've used pre-cooked stuff? I 've been going by his method and measurements for some 30 odd years, and know it for totally fool-proof! Try it with the basic jasmin thaï and it should turn out fine. Or maybe your stove never goes low enough, and you could need to cook it on medium, with a screen sheet underneath? Or you go by measurements as written on the packet? Your pb is puzzling...

Growing up, my dad made Mexican rice and he never cleaned the rice and neither do I. When I was in the Army, a Dominican lady taught me how to make Arroz con Pollo and she was adamant that you clean the rice. Recently, a Vietnamese lady taught me to never rinse Jasmine rice, because it washes away the flavor. It amazes me how different everyone is and how they all think their way is the right way. I look forward to making this dish. Thanks for sharing.

That's a great idea, Chef John! I can see adding sesame seeds or even better fukikake rice seasoning to the top before serving, too. I'd wash the rice to get the starch off so it's not as mushy. Have you ever explored a local Asian international grocery? Many Buddhists have vegan holidays, and there are lot of inexpensive choices for vegan fish, beef, chicken and pork in their freezers. There's also seitan, tempeh and tofu... lentils, beans and grains. Tofurkey makes a good Italian sausage high in protein, and Field Roast makes a mild chicken and sage sausage. I usually recommend those last two for newbies. And there's also a good vegan chorizo on the market, including Trader Joe's own brand.

Made it in Mexico; used a red Poblano instead of bell pepper (IMHO tastes better), two red jalapeños, I had cider vinegar on hand, and we don't have lemons (except our cars - HAHA!!! real Mexicans would laugh at this, US Mexicans, that's a joke - we still tell them sur del Río Bravo, eh? Los quiro mucho), so I "ab"used a lime instead. I used Dolores in oil (3 tins), and Basmati rice (what I had in the pantry though could have gone to H.E.B., but nah ...) ... so this "first Friday of Lent, I'll tell you how it went"! :D Thanks Chef John! I had a packet of spicy tuna that had been lingering in the pantry, and since I’m social distancing at the moment, I’m trying to get creative with my pantry and fridge supplies. I didn’t have bell pepper or green onions, so I subbed in a small diced carrot and added a little onion powder to the marinade. I also used some leftover brown rice. I almost didn’t add the jalapeño because I was worried it would be too spicy for me, but it was pleasantly spicy even with some sambal oelek on top. It had a nice heat, but it was never overwhelming. I will definitely make this again and try the recipe more “out of the box.” It was comforting, tasty, and filling.

I made this last night. I didn't have oil packed tuna so I added a little olive oil to the drained water packed tuna. I also used a 12 oz can of tuna, so more than called for. I cut my diced jalapeno peppers as shown in Chaplins Classics videos, seeds and all. Cooking the rice as described here left it perfectly done. It all mixed well and I like it. Really, it is nowhere near as spicy as you might think.
