You're only supposed to dip the spring roll wrapper in water until its all wet then remove it. It softens while you pile the ingredients. By the time you roll, it's soft enough but strong. Leaving it in water for 30 seconds only expands and make it mushy and easily punctured. Spring rolls need to be wrapped tightly so when you take a bite, everything stays put. Hope that helps.

I found rolling on damp towels worked well, only had to dip the rice sheets in tepid water, they softened quickly. Congrats on spiralizing veggies in rolls! My mind is so wondering what I can do next! I was thinking of a dessert, blackberry and cream cheese with a hint of jalapeno. But spiralizing veggies looks more fun! Thanks!

These are my favourites for summer when it's too hot to turn on the stove! Just a tip, if you use warm water, you only need to dip the rice paper for maybe 2-3 seconds and it'll soften on the plate as you prep the fillings =)

Thanks for sharing. My Vietnamese friends say less is more when it comes to these summer rolls. Again as another viewer suggests don't leave the wrappers in the water as long. In addition, place the ingredients including the tofu east to west on the wrap versus north and south the way you did it. All of the rolls should be tight and compact. It just takes practice.

Most non stick pans are really "not" non stick. Always make sure ur pan is very hot , then add oil ( only a little bit.) Also, oil your food just a little bit before cooking it.

I can eat them 1-2 days later by placing them in a container with a moist towel. The goal is to keep the rice paper moist. The vegetables hold very well. Ziplock baggies could work too.

The 1 pile method of rolling spring rolls makes it really hard to get a nice tight roll without it spliting.. This video shows how to do it in several layers which makes it much easier to get a tight roll without splits. kzbin.info/www/bejne/qXi9gmuelrJ5btU Also seasoning the tofu first will make it much better. You have a bunch of unseasoned veggies and just lemon juice so the only flavor is in the dipping sauce.
