📌 Ingredients for 4 servings
mashed potatoes with dried mushrooms
800 g white, floury potatoes
5 g dried mushrooms (approx. 5 small mushrooms)
200 ml of milk
75 g butter (82% fat)
salt and pepper to taste
pan-seared squid tentacles with butter and garlic
800 g squid tentacles
50 ml olive oil
50 g butter (82% fat)
2 cloves garlic (finely chopped)
salt and pepper to taste
coarsely chopped parsley
1 lemon to serve (sliced)

🔪 Preparation
mashed potatoes with dried mushrooms
Peel the potatoes, cut them into cubes or slices and boil them in salted water.
Place the mushrooms in an electric chopper and pulse a few times until coarsely chopped, then place over the milk.
Heat the milk together with the chopped mushrooms. When the milk starts to swell, turn off the heat and leave the pan covered with a lid for 5-10 minutes to allow the mushrooms to hydrate.
When the potatoes are cooked, drain the water, mash them with a masher and put the butter and milk on them together with the mushrooms. Blend and adjust salt and pepper to taste.

Dry the squid tentacles with a paper towel. This way they will absorb the flavors better. Leave the tops whole, and cut the thicker parts, from the base, into rounds.
Put the oil and butter in a pan. When the butter is almost melted, add the squid tentacles in a single layer (cook twice if necessary) and top with the minced garlic.
Season with salt and pepper and cook, stirring frequently, until the squid is opaque and soft, about 2 minutes, no more!
service
Sprinkle the squid tentacles with coarsely chopped parsley and serve alongside the mushroom mashed potatoes. Drizzle all over with remaining butter sauce in pan.
