If the Star Wars humanoids are anything like us, then they would change and evolve their fonts for the same reasons we do: Technology improvements, better readability (ergonomically), efficiency, boredom, desire to be unique and recognizable as a brand (Empire vs. Alliance), etc. So as the stories move forward in time, I would hope their surrounding aesthetic would do the same.

One of the issues with Letraset is that after you have used the letters you need, you are left with sheets of random letters that are left over. So the designers may also just be using up spares. We used to label cassette tapes in the 80's and we had boxes of left over letters, numbers symbols and shapes. Some time a letter wouldn't transfer and you would look for a matching line of curve in a surplus unused letter to go over and fill in any partial transfers. Letraset was awesome

This video just popped up in my recommended, and I'm glad it did. It's pretty cool that you guys were able to figure this out and recreate the font for others to use. I could see using this font for something like magic runes (which isn't too far off from how it was used in Star Wars, honestly); it has a very distinctive style that would offer a lot of contrast with other fonts that could also be used in a similar way. That way, you could have multiple types of runes, each with their own distinctive style. It's stylized enough that at a glance it would appear as random symbols, but you could hide Easter eggs in the text for those who look closely and notice that they're actually just heavily stylized Latin letters.

I saw a new hope in theater 8-9 times in my preteens, I am amazed and amused at the lengths you have gone!

This goes beyond nerdity and into modern archaeology, and for that I salute you, sir.
