Fall vegetables stored well before refrigeration was available because of their starch, and the starch provided needed body fuel to keep warm through the colder months when most people worked outdoors or in unheated factories. These vegetables are not ‘bad’, we’ve just progressed beyond them. Anyone working outdoors in an harsh winter region would still value them.

Would be really good if you could do a similar clip but on fruit. Which fruit is best for low spiking insulin friendly and which fruit is high spiking insulin fruit. Also a good reminder is vegetables grown underground are normally root and starchy vegetables, vegetables grown above ground are starchy free and insulin friendly.

We eat starchy vegetabless almost daily for satiety, but I always make sure we eat mostly non-starchy vegetables, also, for fibre.

Once every two week cycle we eat starchy vegetables. We love carrots, rutabagas, spaghetti squash and such, but we eat far more of the non starchy ones. I think it is so important that we understand why the starchy ones are good too, not just why not....

I like soups with non-starchy vegetables. I count my carbs by cups. Milk is 12 grams of carbohydrates, so that's my threshold for a meal or snack. I try to have my fruit in the morning, so I get the most energy when I wake up. Otherwise, I dance at night because of the energy from dinner or late night snack.

They would likely be an issue on keto, but I include them in the low-carb meal plans in my coaching program. The program has meal plans ranging from low-carb to keto because not everyone needs to push their carbs to the keto range.

yes, exactly. Lower percentage of carbs naturally increases the percentages of proteins and fats. So what level of protein do you eat? What a wonderful study that was..... "A Reduced Ratio of Dietary Carbohydrate to Protein Improves Body Composition and Blood Lipid Profiles During Weight Loss in Adult Women" Excellent study. Conclusion? This study demonstrates that increasing the proportion of protein to carbohydrate in the diet of adult women has positive effects on body composition, blood lipids, glucose homeostasis and satiety during weight loss. Wonderful. And very very dangerous. See all those vegetables, I eat them all (except canned). I'm overweight but now losing weight fast, only 4 months in. Sure I could lose weight faster on a low carb diet. But, and here is the difference, I want to increase drastically my chances of living a long life. That is why I eat all those lovely carbs. Because I do not dismiss professor T. Colin Campbell. That's why. Oh, and I do not want to inflict emotional anguish on my loved ones, either.

Yes, I think it's a pretty good rule of thumb to only eat veg that grows above ground. Even onions, which are not starchy are higher in net carbs. But they are the only veg that I can't do without. Imagine making a curry or a chilli without onions? Still, I've lost 20lbs.

Hi Michael, theoretically, you could argue that the higher a food is on the glycemic index, the longer it would take for your blood sugar and insulin to return to normal. However, there would be a lot of factors involved including how insulin sensitive the person is and what other foods they ate at the same time.

Is it ok to take a long time to eat lunch for example? I am doing intermittent fasting and lunch (approx 12-15 hours fast) I eat in my car or at my desk sometimes for an hour and half (savoring my food) should I eat more quickly to get my insulin back down? Thanks
