The thing with Ba'al is he really was a smart guy. Granted, he was not quite as smart as he thought he was, but some of that arrogance did stem from generally being the cagiest guy in the room

Ba'al was THE greatest villain of the SG-1 series... hands down. Yeah, he had that 'Bow before me! I am a god!' mentality, but he didnt let it rule his behavior like the rest of them. He was also willing to, albeit grudgingly, respect SG-1 instead of outrightly dismissing them as the other system lords did.

It's like Jacob said in one episode. These people have been trapped in their own bodies for years, they wouldn't survive for much longer without a symbiote to sustain them anyway, killing them is doing them a big favour. There's a moving SG1 episode where Apophis's host takes control of his body for the first time in 10,000 years
