lately I've been using the work sharp, or the toolcker 1x30. I also work with water sharpeners like the tormek/wen. and depending on the customers ill sharpen with wet stones.

Is it easy to learn how to sharpen knives? I just got the ken onion, but afraid to ruin my knives!

It's pretty easy with the Ken Onion, but I'd recommend practicing with a cheap knife first. Sometimes you can find them at thrift stores or dollar stores

Just gotta do it. Ken Onion is good to learn on. Once you have you're knife sharpened, dull it with a brick and do it again. Depending on how well you pick it up, you'll do that 50 to 100 times. 😁

Practice on a cheap knife or knife you don’t care about. I got the Mk2 version and then a riser to keep the knife steady and after a bit of practice, it does not take long. I find it relaxing to do tbh.
