I feel like you were telling my story. I bought a deserted farm 4 years ago and the first thing I did was plant 5 fruit trees, 3 apple and 2 cherry. The house wasn't yet livable, I've been working on it for the last 3 years and was finally able to at least move in 'roughing it' this past July but, I now have more apple and cherry trees, pear and plum trees, nectarines, apricots, peach trees. Northern pecan, black walnut, chestnut and butternut off in a corner. Hazelnuts, raspberry, blueberry and haskap bushes, gooseberry, strawberry plants, 4 different colours of currants, rhubarb, jeruselam artichoke, asparagus, egyptian walking onions, hardy kiwi on a trellis and saffron bulbs...I'm probably forgetting some but I harvested my first 16 apples from that very first (Liberty) apple tree I planted in 2020 this past Fall. It was glorious. I will never stop learning and you can never not teach me something new.

All of that education and you finally found a lens to use for focusing it. So many people that come across Permaculture have an experience similar to yours Stefan - the Design Science just changes the way we see the world ;)

Absolutely design just gives you a framework for thinking and trying several variations in outcomes. Then being able to evaluate each and determine the best idea (at the time). Also realize it’s fluid and can change as new information becomes available.

31:00 - yes, you may only need 10 acres, but extra acres YOU control, that are AROUND the acres you use is something I have come to appreciate. Our 20 acres seems so small, because of the farming practices of neighbours (harmful sprays, fence-jumping dogs that destroy our geese, mowing insect-habitat grass constantly, etc). If I move, I'm looking for a lot more land than I want to use.

Hey Stefan, have you ever grow trees from seed, then over grafted and never moved/transplanted to keep the tap root intact?

No. I grew trees from seed and transplanted them while very small (less than 10”). Am waiting for them to get big enough to graft. But what you ask was the goal for one orchard block. Worth doing and you can graft above the first two branches to see what the seedling becomes.
