I honestly hope that the Open Seasons Mandalorian Civil War becomes canon. It would make Boba Fett and Bo Katan's interaction have more weight, Jango's backstory hasn't been explored in Canon yet, Mandalorian Season 2 confirmed that a civil war did occur between the Mandalorians (it would be contradicting if the peaceful New Mandalorians were the ones that fought Death Watch), that a 'Mentor Jast' found Jango, it would explain why the New Mandalorians didn't consider Jango to be a true Mandalorian, and it hasn't been fully explained why Jango wanted a son (in canon). To me personally, Open Seasons could fit into the new canon with some minor changes.

Jango Fett understood that Mandalorians were their own biggest enemy and thats why he chose to live his own life by his own standards and honoring his Mandalorians. People like Bo Katan can't understand that because she chose to be a radical terrorist. Jango and Boba honor mandalore through their armor and memory of those that fought and raised them. They don't need to fight and die for a planet or kill other mandalorians, Jango made that sacrifice and paid for it and even was a major factor of ending the mandalorian civil war. The Fett's are true mandalorians and always will be. The Vizla's are almost always just power hungry warlords bent on power.
