Surprisingly good, surprisingly easy would be the best way to describe this. For such a simple quick meal with minimal ingredients you just can't go wrong. Of course we are talking about filet mignon so it's hard to not enjoy but just the same it really came out perfect. Hope you enjoy, feel free to comment .

This is the first griddle video i've seen where the chef actually puts a really good sear on the steak.

Whats up Chili?! That is one of our favorite things about the griddle vs grill,,, you can crust the hell outta a piece of beef! A few little drizzles of good oil as it sizzles and man.... what a crust! Thanks for checking us out and for leaving a comment!

Nicely done. I like mine more medium rare so will probably not cover them as long. I love the crust though. On any meat you cook, the Crust is a Must! potatoes looked great. Were they cooked all the way through? I may add some grated parmesan to them before putting them face down. That would be good huh?

If that's the way you like your steaks, awesome. But it's not medium rare. It's medium well. I've had great success removing my steaks at 125 degrees with a 10-minute rest. They always finish at 130 degrees or a little higher. Perfect mid rare

You were going to put those potatoes in that pan, so why not prep them in the pan with the oil and seasoning instead of getting the wood surface messy? Geez

I don’t understand why everyone thinks the steaks gotta be room temp before you cook Them. They don’t. It doesn’t Leave you with enough time to get a quality sear. Take then out of the fridge hit them with s&p and immediately cook them. The fresh coat of s&p will aid in the sear and from the time They go from 39-55 degrees internal they will have built a good sear. Then the rest of the cook is finishing the sear. If you take them Out at internal temp 110 having been flipping every 1:30-2 min they will come out perfectly medium rare with minimal gray wall. But if you wait until they are room temp you don’t have enough time to get a complete crust before they gotta come off. Try it this way and see how you like it because I’ve done it both ways and trust me. It’s with the extra time getting the sear and you will find that the ridiculous myth of having to wait until they are room temp is a joke.

I know this comment sounded douchey... but it was coffee inspired and getting a little tired of the whole letting the steaks be room temp. I’ve tried it both ways. The sear on these is good. But if the steaks developed the sear sooner and we’re taken off a bit earlier. You accomplish the medium rare more consistently throughout and minimize the gray.

Sam Aycock you minimize the gray by cooking with proper methods. Roast to temp and reverse sear once roasted to desired doneness. No amount of flipping or room temp resting will change that.

In this video I was using a blend of peanut and olive oil. I have since switched to straight canola.

how long do the potatoes have to stay on? looks like it was about 15 minutes?

Because the potatoes are pre-cooked it's as long as you would like. In the video it was about 15 minutes as you were saying but you can certainly leave them on for longer as well. Just keep taking a peek. I like them almost burnt. It's going to be win win as long as you have your steak done right. Good luck and let us know how you like it.

So once you cut them, just microwave 8-10min on high? and then toss 'em on the griddle?

I am confused, you could have done that in a cast iron fry pan, while you gad potatoes in that aluminumn tray in the oven?? Like, over kill

Marsha Marsha Marsha. ;) (Brady Bunch) The oil shouldn't be a concern. What you put on top of your steak and potatoes should be a concern. I also don't think they would mind if you used less oil, if you choose. These great guys put out a vid to show us how they made this meal. I think it was fantastic and I really appreciate them taking time to shoot the vid, edit, and post for us to learn....and dream. lol They are here to help, not be doctors or nutritionists'.
