Andy I hate to say it but you have an insulated patio roof, the foam in-between the ceiling skin and roof top hates any direct heat. Over time, it will melt, and the underskin will warp and discolour. The BBQ might be OK due to height. However, the flu from the pizza and smoker will definitely affect the ceiling mate. I supply and build these roofs for a living. It can be fixed. You will need to bring the flu up through the roof and have an extra shroud around it to stop the heat. Hope that helps 🙏 🙂

you think you know more than Andy and the people he spent a lot of money on to build/setup the thing. he's not a normal run of the mill client who doesn't know much, he's practically a celebrity chef who brings the best to do things and obv had all the advice he can get in the time frame they had. these talented, successful entertainment chefs, (although not perfect) know more than your 19 years on the job. he'll ask if he needs it for you to say hope that helps. you never even saw his roof closely. he films there too. that's even more knowledge he needs to have about this. you are one of those who thinks they know more and wants to say something in the comments for attention to pat yourself on the back without realizing what an ass you actually sound like. wording matters a lot too and you sound rude actually, your tone was off. ppl do give good advice but it's really easy to tell by now who wants to actually engage and help and who doesn't. he'll be o.k without @ garycook3791 telling him lol

This is my absolute favorite way to close out a weekend, no pretentious cheffy stuff (not that any of Andys videos are pretentious) But these videos are just soooo chilled and relaxing. My favorite meal when I'm homesick is my Mums tinned (Rosella) tomato soup with bird nest pasta and cream, the least sophisticated meal on the planet but one that make me feel warm and safe.

If you snap a photo of a particular herb in the garden with your iPhone, wait a couple of seconds and the information tab, (down the bottom next to the heart) will change to a leaf icon and if you tap on it, it will tell you the type of herb or plant it is. My grandmother who came from Germany and emigrated to Canada when she was 19. Made us Rivela soup a chicken/veg based clear soup, in a big pot, strained/veg on the side with flour and egg noodles made fresh using a box grater. When she passed, my one sister of 5 took on the task to replicate it and has mastered Grannies dish. She was a great cook. Thankfully, it is delicious and truly a welcomed dish during the cold months in Canada.

Don't be too eager to harvest your fresh bay leaves, because they grow very slowly. Try to hold off for 6-12 months. Also, finger limes can easily be shocked by liquid fertiliser or anything fast-acting, so stick to slow release or just gradual additional of natural organic material. I find lemongrass goes well in a corner rather than between other plants unless you space thing pretty far apart. Some of your herbs like will be best planted in a successive manner because they will bolt fairly quickly, so I generally do coriander in small pots, planting a couple of seeds every couple of weeks.

You may like to move the curry leaf plant, (maybe to a large pot) as they can get quite big & spread like a weed. I think the berries are toxic, something to check, especially with Duck. Lemon grass can get a bit berserk too. If everything grows well, it will probably be a bit too crowded & create too much shade for some plants to do well, but do love your plant choices! Hopefully the mint has a barrier in that corner. Love your outdoor kitchen & garden, so jelly!

What an awesome outdoor kitchen!!! The one food I crave when I’m homesick is Lowcountry Boil or Steamed Oysters. We get a bushel of oysters and do an oyster roast. Cover them in a burlap sack on a flattop and steam em up. Some lemon and hot sauce.

The dish I crave when I'm homesick is Berdekin Duck which is basically corned beef fritters. You have to have had corned beef during the week for my Mum to use the leftovers, shredded and fried in a mix of egg and flour, salted and then served with tomato sauce. It had to have come from her Mum in regional Victoria and just handed down through the ages.

Nice outdoor set up. With regard to the lighting. You're never going to defeat the big orange ball in the sky. You can use some mesh blinds/screens to reduce its glare on the kitchen (allowing more shooting time). You can use reflectors instead of lights for illumination, but they can be a faff. You real friend is a light meter and Vari white lights (to match the Colour temp of the prevailing conditions) but the baby indoor fixtures you use won't really cut it. Soft lights are okay for fill, but outdoors you're better off with Fresnel fixtures with a bit if light diffusion if needed.

I've been living in SE Asia for the last 15 years, so a roast leg of lamb is always on the menu when I visit Oz. A friend in Vietnam went and studied in NZ. When she came back I asked her about the lamb. She had never had it before and much to my dismay, she said she didn't like it. :( :)

what i crave when i am home sick is either my mom's makluba or molokhia. or grape leaves cooked with stuffed eggplant and zucchini as well as lamb pieces in the pot. all Palestinian, Levant dishes. very good. molokhia is technically Egyptian but the Levant has a version. that molokhia smell is out of this world too. you smell the lemon and the garlic and it's just the best thing to come home to.

I guess my homesick meal would be "fårikål", which also happens to be Norway's national dish. It's pretty much just mutton, cabbage pepper corns and salt, layered in a pan and boiled for hours until the meat is tender. The leftovers on day two and three are even tastier!

To the eggs question: If the eggs are washed after being laid they should be refrigerated. If they're straight from the chicken, there is a natural film around the eggs which protects it. Some countries require eggs to be washed before sale. I don't know if there is a benefit to not refrigerating eggs, so in either case I would recommend keeping them in the fridge.

We usually always have to contain it to their own pots as they are incredibly resilient and strong at outgrowing their allocated space!

Quick and dirty approach for the light issues and fall off would be turn the table 90 degrees and face the sun. Like the white plates screen left are pretty blown out hard to see what's on the plate nearest the chopping board. A more permanet fix is to put in an ourdoor curtain thingo - like canvas or whatever so the light from screen left can't get in, then just use artificial lighitng - should be able to get reasonably even and consistent lighting then. If you get white translucent curtain like some synthetic that light can semi pass though it may act like a huge softbox, but you'll probably still get some fall off toward screen right and may introduce colour cast issues. If you're planning on doing a lot of video out there - and it looks like you are, you may want to control - eliminate the bulk of - the natural light and you're probably gonna want to light the important areas of the set like the grill, the wood oven, the smoker and the main work bench and maybe some LED strips behind the planters. Natural light is a bit of a pain as it varies a lot, so if you're using automatic gain/exposure control the camera setting may end up chasing the changing lighting conditions e.g. when clouds come over the exposure will change and then revert when the clouds pass and that may be seen in the video. You may also have issues with white balance, because you're gonna want your artificial light to match the natural light's colour temp. But natural light colour temp can change depending on the time of day and those pesky clouds. The other issue if you use a translucent curtain is that will possibly introduce a colour cast, so maybe just an opaque curtain might be easiest. The easiest solution - if you plan on doing a lot of video out there, is control (more or less eliminate) the natural light. Oh and um - rissoles please. I crave them a lot and my Mum used to cook them - but she passed last year after a few years of cancer, so I'm kinda missing them - and of course her..

For our first anniversary 34 years ago I had mahi mahi with reduced grapefruit sauce and roasted asparagus. It was memorable, I guess that ranks as memorable. Homesick food? Roasted chuck, with potatoes and carrots in the pan. Wait, beef noodles. It was at a Pennsylvania amish restaurant in NW PA. I can't get them right. Big thick noodles and an intense beef flavor. Probably had a pot of salt in them. Never enough noodles.
