Steamed Dumplings (thin skin and delicious filling😋) How To Make Authentic Sichuan Chili Oil

Steamed dumplings recipe:
Ingredients for about 30 dumplings:
Skin:
120g wheat starch
35g corn starch
40g tapioca starch
1 Tbsp cooking oil
260g water
Filling:
20g dried shrimp
40g salted radish
3 dried shiitake mushrooms
200g jicama
40g shallots
100g pork
50g cooking oil
1 Tbsp cooking wine
1/2 tsp chicken powder
1 tsp sugar
1/2 tsp sesame oil
2 tsp corn starch
50g water
20g green onion
20g roasted peanuts
Dipping sauce:
1 Tbsp Sichuan chili oil
1 Tbsp light soy sauce
1 tsp sesame oil
1 tsp peanut butter
1 tsp sugar
1 tsp roasted sesame
1 tsp minced garlic
some chopped green onions
Mix well.
Sichuan chili oil recipe:
30g crushed chili
1 tsp salt
10g minced garlic
1.5 cup cooking oil
5g cinnamon stick
4 star anise
3 Tbsp sichuan pepper
3 bay leaves
6g cardamom
1/2 Tbsp sesame oil
2 tsp roasted sesame
