Yes, it is hot to touch when is cooked. The metal tray is extremely hot, I need to use glove to remove. If you look closely at the video at 3.52 , you can see the steam coming out when opening the cover.

Does it smoke a lot? Like the steam? I'm worried because maybe the smoke detector will go off

No, not for the one I am using. The most it reach the face. So got to be careful when opening.

How many time does it take to cook rise, fish, eggs, veg?

I cooked all at the same time. It took thirty mins to cook. Can reduce the water in the box if prefer to cook faster than 30 mins for food that can cook easily. Ideally is one cup of water in the box for heating food, two cups for cooking food.

There's a manual that comes with the set that teaches you the amount of water to put in the box. The rest will be based on practice makes perfect. Happy cooking.

Will water droplets from the upper tray get into the lower tray I wonder

If both steamed same time, water will be formed in both trays. I geneally dont add much water unless the food need water to cook to soften it.
