I normally don't remove ginger skin. Too lazy, beside there are nutrients in the skin that I'd like to keep. I just scrub clean the ginger under running water, then I cut it into match stick size slices. I do steamed fish with ginger and lime too. I am from Malaysia. My favorite fish is kembong (Indian mackerel), bawal hitam (black pomfret) and cencaru (hard tail scad) but I think any fish is OK. I come to this channel now coz I am plannng to do this recipe tomorrow. I have plenty of culantro and lemongrass growing in my garden, I'll use them for this recipe

This is one of my favorite dishes to make. I learned a few different tricks with your recipe, like the slicing of the scallion for such a lovely presentation. The makeshift steamer is brilliant! Thank you for sharing your gift with all of us!

Have watched a series of your steam fish cooking and this one is this 3 years ago. I believe you have improvised the steaming method with a coiled aluminium foil which I find brilliant. Though I have the steaming apparatus but going for this method just for the fun of it. And both of you are evergreen and so fun to watch. Mama Noi is the loveliest and jovial chef I have ever watched. Love her and love you Marion! 💕💕💕 please send my love to Mama Noi!

I just prepared steamed fish like this for a dinner with friends. It was A TOTAL HIT. I served it with garlic linguini (i had rice the last two days), of course YOUR garlic linguini recipe. I'm from Okotoks Alberta Canada. My name is Cindy. I make one of your meals per week. My favorite dishes from you are the pasta ones, but I need some healthy dishes in my arsenal so I'm going to try this one. I love the garlic, prawn pasta. We keep the kinda fattening ones for Friday night dinners. I am dieing to get my hands on red chillies. You can't get them here ever. I also can't wait to get some gojijung paste. Marion I want to know that once in Chinese restaurant I ate crispy spinach it was finely chopped my question is if we fry any green does it retains its nutrients

Pardon me, I'll try to help to answer. Maybe the spinach for the crunchy part, it was coated a lil bit of powder. And mostly in Chinese cooking way, they pre heated the oil at the wok, after it getting a lil bit smoke, means the wok is searing hot. And then you start to cook the coated spinach at fast pace, like most Chinese cooking. Make sure that the searing hot oil at the wok is fully drown the spinach. Then you just, cook it for a couple seconds, just make the thin coated spinach fully turning golden crisp. Take it out, let it rest on wire rack. Then you can start _dig in_ And the trick is for the flavour, you mix it the powder with some condiment, like salt, a lil bit sugar, garlic powder, MSG, and if you like it spicy, you could add chilli powder.

Lots of folks do, but they make slits in the fish before (and just steam the fish w/out the soy). And put boiling oil on top of the fish afterwards to fry the skin. (note: they paper towel off the excess oil after that and once the oil is gone they lattle the soy on the side of the fish)
