Soaking overnight is a way control the amount of liquid (water) the grains adsorbed so they can be cooked to perfection by steaming. It is best to do it at room temp overnight and method duration can be reduced to a few hours with hot water. It is not possible to cook by steaming without overnight soaking. My 2 cents.

Hi Marion, I made this recioe, but I decided to add palm sugar to thr coconut sauce, which made it dark and made a contrast on the rice and mango when served. Besides palm sugar goes well with coconut milk.

Mango sticky rice is one of my favourite dessert. Must try melted palm sugar with coconut milk and a pinch of salt. Soak the durian and refrigerate. Serve when it's chilled. I am from Malaysia

I had these custardy ball things when we visited Chinatown in bangkok and it was like half coconut custard and half normal custard with a mixture of sweet and salty. Man they were amazing!! I have forgotten the name but it would so good to make them and eat them again😍

Not sure if they're a traditional Thai snack but we do have custard filled bread called ขนมปังสังขยา - custard bread. The one you had might have been a fusion!

Hiya, we have just returned from a holiday in Koh Samui. We tried the sticky mango rice from a market in Fishermans Village. It was amazing. I was desperate to try the recipe and I thought I had everything in my kitchen. As you say I cannot use normal rice, only glutinous rice. 😫 I have to wait now till I can get to the supermarket. So sad😥. By the way, we are from Hampshire, in the UK. Love watching you both.
