This is Steamed Glutinous Rice With Chicken, one of my favorite Dim Sum selections. Most Chinese Dim Sum restaurants usually serve them wrapped with lotus leaves. Depending on your preference, you can either use pork or chicken meat and maybe add a few slices of thinly cut Chinese's sausages (Lap Cheong).
Steamed Glutinous Rice With Chicken
Ingredients
2 Cups Glutinous Rice, soaked overnight and drained
8 Dried Shitake Mushrooms, soaked and stem removed
1 1/2 Tbsp Peanut Oil
8 Small Stainless Steel bowls or Aluminum Foil Tart Pan (about 4 1/2 ” diameter)
Seasoning (Rice)
1 Tbsp Oyster Sauce
1 1/2 Tbsp Light Soy Sauce
2 tsp Dark Soy Sauce
2 tsp Sugar
320 g/1 Piece Chicken Breast, boneless and skinless, cut into bite size
320 g/3 Chicken Drumsticks,chopped into smaller pieces
Marinate (Chicken)
1 Tbsp Oyster Sauce
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
2 tsp Minced Ginger
1 Tbsp Shaoxing Wine
1 tsp Sesame Oil
1 1/2 tsp Corn Flour
A few dashes of White Pepper

Thank you so much for making this video ! Ahhhh I miss my Loh Mai Kai sooo much ! Finally i know how it's made lol ! Also I prefer my LMK with chestnuts ! It's the bestttttttt :D

Just prep everything for tomorrow (sat) but i'm stuffing the glutinous rice,mushroom,sausage into the marinated chicken wing(debone) instead of bowl then cook till wing is done , hope it turn out ok :)

The dark soy sauce you used in preparing the marinade looked very viscous compared to the stuff I usually see for sale in the UK. Is that what 'real' dark soy should be like (almost the same consistency as kecap manis)?

AllaMortify That was Malaysian dark soy sauce & yes consistency as kecap manis but not as sweet. You use regular dark soy sauce, it won't alter the taste, just the color.

It won't turn out the same. As the rice texture will be diff.
