This is Steamed Glutinous Rice With Chicken, one of my favorite Dim Sum selections. Most Chinese Dim Sum restaurants usually serve them wrapped with lotus leaves. Depending on your preference, you can either use pork or chicken meat and maybe add a few slices of thinly cut Chinese's sausages (Lap Cheong).
Steamed Glutinous Rice With Chicken
Ingredients
2 Cups Glutinous Rice, soaked overnight and drained
8 Dried Shitake Mushrooms, soaked and stem removed
1 1/2 Tbsp Peanut Oil
8 Small Stainless Steel bowls or Aluminum Foil Tart Pan (about 4 1/2 ” diameter)
Seasoning (Rice)
1 Tbsp Oyster Sauce
1 1/2 Tbsp Light Soy Sauce
2 tsp Dark Soy Sauce
2 tsp Sugar
320 g/1 Piece Chicken Breast, boneless and skinless, cut into bite size
320 g/3 Chicken Drumsticks,chopped into smaller pieces
Marinate (Chicken)
1 Tbsp Oyster Sauce
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
2 tsp Minced Ginger
1 Tbsp Shaoxing Wine
1 tsp Sesame Oil
1 1/2 tsp Corn Flour
A few dashes of White Pepper
