I love that the precursor to testing the cutting ability of the blade is to pour some wine.

Stefan, the history of Calais (including pictures), the inside look into the knife making process, and the wonderful editing means this video was over the top! I love knives that tell a story also and I appreciate that you can bring that story to life. p.s. I found you on Facebook too. -Daniel

Beautiful knife, certainly, and a worthy gentleman’s blade. Reminded me a little of the Ponson I have, with its tapering handle. A slim handle is elegant but for me always feels a bit slight in the hand and not a proper working knife. In fact, there are knives I use for eating and picnics (mostly French) and the others that are more utilitarian and workmanlike ( like EKA and Cudeman). The Calaisien would certainly be in the right place next to the Chambriard Thiers and it has a more upswept and energetic look compared to the Ponson. A step above in design. But sometimes you just want a knife that is ready to be your companion through thick and thin. And I wouldn’t choose Le Calaisien for that.

Another wonderful presentation. Stefan, you are still the only knife reviewer I'm aware of who pours wine as part of their testing process. Don't ever change! This knife is very much to my taste, I love the understated black and silver, the clean blade, the tangible sense of history and place. Truly a classic already.

An official knife for every town - I can see that happening here in knife-phobic England! Just goes to show what a difference a 20-mile sea channel makes... But Le Calaisien - I can't say I like it, but your presentation is excellent as always.

I must say that I adore the blade shape of Le Calaisien, even if the handles are not my favourite. Good to see France adopting 14c28n as their higher end cutlery steel. And you always make me hungry by the end of the video. Thank you Stefan.
