Ugali (pronounced oo-ga-ly) is a staple starch component of many African meals, especially in Southern and East Africa. It is generally made from maize/corn flour and water. The texture of ugali is usually thicker than mashed potatoes or polenta. When ugali is cooked with another starch, it is usually given a specific regional name. This is a filling dish that can be enjoyed with any type of stew and you won't need to eat anything else for hours! In this video, I will also teach you my family recipe for cooking tilapia curry as an accompaniment, I'll also be preparing Ugali and Sukuma Wiki. Tilapia is popular amongst the populations living around the great Lake Victoria in East Africa. It is very nutritious, affordable and delicious!

I love tilapia! I am going to be making the curry for sure. I don't know about the starch. I love corn but I have a digestion problem with most starches. I will think about it and maybe try a small amount, so if I cant eat it, probably my husband will (he loves starches!). Thank you so much for your very good recipes and clear explanations. Peace...

Hi Catherine Njoki!! I was very happy to do a video with Jayne as it reminded me of when we used to cook together in my parents kitchen :) .I only wish she could have stayed longer, that way we'd have had time to do more videos together :(. Fathiya!!!!! Hi sis!! Thank you for stopping by and for the kind words!! I'm sorry my reply is coming late. Ugali is not hard to make at all. If you have a cooking paddle, cornflour and some elbow grease, you're good to go ;). There is ugali made of millet and also tapioca. The tapioca one has a sticky consistency and takes lots of practice (and patience) to cook but is so good!! I use the cornflour that they sell at the grocery store. You can use "Masa" brand or if you want finer flour,

Hey Stella, I´m from Germany and stayed in Kenya for about 5 months. I felt in love with that simple dish from Kenya called Maharagwe. But when I´m in Germany it´s never the good old taste. Do you have a simple recipe for me to make a nice, simple Maharagwe? THX

CONT-try the "Mas Arepa" corn flour whose grain is of a finer texture. You can find these in the Ethnic or International aisle of your grocery store. Happy cooking my friend!!

Stella gal, I tried the mahamri en they were very delicious but my body didn't like the yeast because i've been trying now for over 2 yrs to a void it. Can baking powder work instead of yeast? Thanks a million.

Hi matawa!! I'm sorry to hear about your body's reaction to yeast :(. Unfortunately, I do not have a baking powder-based mahamri recipe. I do, however, have a "half-cake" mandazi recipe that uses baking powder as opposed to yeast. When you get time, please try those out. They are equally delicious, except that the recipe does not utilize coconut milk and has different spices added to the dough. Please let me know what you think when you do try them out.
