STICKY CHICKEN 4 Yellow Onions 4-5 lbs of Chicken on the Bone Cajun Seasoning Garlic Powder Flour 1 Stick of Butter 2 Cups of Chicken Stock *optional* 2 Tablespoons of Corn Starch 1/4 Cup Cold Water Start out by heating a large pot over a Medium/High Heat. Chop the onions and set aside. Coat each side of the chicken with generous amounts of cajun seasoning and garlic powder. Dust each side of the chicken with flour. In the large pot, add the stick of butter. Once the butter as melted, add the chicken to the pot. The chicken should layer tightly next to one another along the bottom. Brown the chick for 6-8 minuets on each side. Could possibly be less depending on how high your heat is. Once you you’ve browned the chicken on all sides, you’re going to want to remove the chicken into a bowl off on the side. Next add the chopped onions to the pot. Begin stirring the onions so that you can get up any remaining drippings on the bottom of the pot. Continue to sauté the onions for 25-30 minuets. After about 25-30 minuets, add small amount of chicken stock to the pot. Blend any browning that may be stuck to the pot. Next add the chicken back to the pot. Pour in any liquid that may be left in the bowl. Add the remaining chicken stock. Bring to a boil, cover, lower to a simmering heat, and let simmer for 1 : 30 - 2 hours. It’s ok to stir every 20 minuets or so. At the end of simmering, if you want to thicken the sauce, you can mix 2 tablespoons of cornstarch with cold water and blend in. Cook some rice, and enjoy!

My grandma lost the ability to cook thanks to Alzheimer’s before I was old enough and in the same state for more than a summer or holidays to learn from her. Cajun Ninja has basically brought her back from the dead. This recipe gave me the know how to do her roasts as well. She did chicken and roasts the same way with that thin onion gravy.

This Was My Mother's Uick And Easy Recipe She Would Cook All The Time, Especially When She Didn't Want To Spend A Lot Of Time In The Kitchen. Then I Use To Make It. Have Not Made It In Awhile. I Definitely Will Be Cooking This This Weekend. Thanks For Reminding Me Of This Classic. My Mother Is 91 yrs. Old, And From East Texas And A Great Cook With A Home Economics And Science Degree In, Which Also Loved Baking Especially Her Favorite Pineapple Coconut Cakes, Only Using Swann Cake Flour For All Her Cakes. I Took Home Economics From 7th Grade Thru 12th grade, Every Year. Made this Monday night and we are really enjoying the leftovers just as much as the night I cooked it. I’m sad they are almost gone. When I started out I didn’t realize it had to cook for 1.5-2 hours so I did everything you said up until the point where you put chicken and vegetables all together and simmer in the pot. Instead I put it in my instant pot and cooked for 25 minutes after coming to pressure. I don’t know if it ended up as good as it would have on the stove but it was delicious and a great alternative to finishing it on the stove, if you don’t have the time. My kids and I enjoyed watching you and I promised my husband 1 Cajun recipe a week (We are transplants from Georgia) so I really look forward to learning to cook Cajun from your videos. Thanks so much!! Oh and I forgot, I only had boneless thighs and it still came out wonderful.

What a great treat! The only time ive ever cooked this awesome cajun dish, I used my favorite cajun chef's recipe, Paul Prudhomme's recipe. He explains that old hens would be rather tough, and cajun moms would used this method to tenderize them, bringing the jell from the bones, and making it sticky. This looks much simplier, and I will for sure try it! If I like this better than Pauls, I could never tell you, he might haunt me...lol. Hey, when your bro Justin Poirier beats Nate Diaz, your state will be pushing for a title fight!

I’m from the New Orleans metro area and we call this chicken étouffée, which is the same as calling it smothered chicken since étouffée means smothered in French. If we add a roux to it, we call it chicken fricassée and pronounce it like freak-ah-say. Usually we make the étouffée thicker than the fricassée in my area.

Tried this last night. My mom was so surprised on how tender the chicken was and she loved that it fell off the bone. My fiancé loved it too! We ate ours with mashed potatoes (fiancé don’t favor rice) and max & cheese. It was delicious and easy to make. Definitely a go to recipe for now on.

Made this last Sunday for dinner and it turned out delicious! I’ve always known this as “stewed chicken” always made with white onions, however, the yellow onions gave the dish the perfect amount of sweetness, no extra sugar was needed. This is my new go to recipe. Served mine with some white rice and sautéed spinach with bacon, onions and topped it off with hard boiled eggs.

Bob Wieters right on!! Yea chicken stew tends to be made with a roux and other vegetables. With the sticky chicken, you have a LOT of onion. Cooking it down so much that it actually has a sticky feel to it. 😊👊🏻

@@TheCajunNinja To me, nothing makes a better gravy than slow cooked down, almost liquified, onions! I add a good helping of fresh well-pulverised garlic to mine, when I add back the chicken, so it doesn't burn. Probably a dozen cloves to this dish, cuz that's how I roll!

DAT'S WHAT I'M TAWKIN BOUT BAW !! KIIEEEAAAAWWWW DANG NAW !! My Momma would do something like that, but she called it a ROOSTER GRAVY !! Of course she would use roosters !! Too many roosters in a chicken coop is not a good thing, know what I mean !!! She would cook those roosters down on a low heat all day it seemed like, but that gravy was soooooooo sticky it took a hot washrag to get that stuff your fingers ! Boy that was some good eating after a loooooong day of riding on that tractor, or combine !!
