I never thought about how crazy it was that the American MasterChef had so few Asian dish challenges given how big a part Asian food plays in the North American restaurant industry. MasterChef Canada really brought into focus how Asian culinary skills like stirfrying can be just important as cooking a perfect medium rare steak in today's culinary world.

If it's stir fry or fried rice, your ingredients should be cut into bite-size. EVERYTHING IS IN BITE-SIZED: brocolli, fish, chicken, carrots, celery, ham, bacon, etc. Whatever your version calls for. But these dishes are nowhere near the visual of a fried rice.

You cannot mess up on a stir fry. I’ve been stir frying since 3rd grade. When you have to many ingredients going into a simple dish, you just murdered it completely. If you can’t use soy sauce, salt, pepper and a little sugar… you don’t belong in the kitchen. Oyster sauce is just a bonus, not the main seasoning. Lol

Actually very tricky challenge, which I think may not be fair to those that don't eat a lot of Asian food. To stir fry rice, one key is to use overnight rice that was put in the fridge which would allow reduced moisture. So, instead of cooking the rice like normal and then stir fry it in high heat (at the risk of burning the rice), it's probably more wise to keep the lid open when it's 70% percent cooked.

A lot of Asian cuisines actually don’t involve stir fry, so I won’t be surprised if an Asian person has never made a stir fry with a wok, which is a quintessential Chinese food. However, stir fry is literally the easiest and simplest form of cooking, so it’s just ridiculous if anyone, Asian or not, on a cooking competition didn’t know how to stir fry.

What commenters need to realize is that, since this season aired, there have been a ton of “East Asian food, demystified” videos on the internet. I guarantee almost none of these contestants knew about techniques or which rice to use or what kind of veggies to use when this episode aired. Even the Thai-inspired dish seems like a replication of something you can get from any Thai restaurant.
