As an experienced canner please always wash your jars before using them..they have a chemical, nasty smell. You did great in my opinion!

I did this when making pickled beets. I bought no.10 cans of baby beets. Saved me from having to peel or take up garden space trying to grow enough. Worked great and no red hands 😊

I just want to say that there are some tested recipes for recanning canned tomato products. For those that feel better about using tested recipes there is Cayenne Pepper Sauce from nchfp, then you have mrs wages chili base, mrs wages salsa's, mrs wages pizza sauce, i think all the mrs wages tomato recipes are for canned or fresh tomatoes.

The lid should remain on to ensure proper heating and sealing. If you remove lid the temperature inside the canner could drop significantly, ending the boil, and affecting the sealing process. This risks compromising food safety. The lid would need to be replaced and the temp brought back up to the boiling point. It is best to reset the time to ensure the total "boiling" and sealing time are met.

As far as USDA it amazes me that it not approved as I just used Mrs.Wages Salsa mix to can a lot of salsa as I didn't prepare enough last season. It includes directions for using fresh as well as canned tomatoes. I doubled the recipe and mixed medium and mild for the perfect blend for my family. If it's not considered a safe practice can a company sell a product that can use fresh or caned tomatoes? The choice is yours, But do your research. Thanks for sharing. You have a new here.

I would just freeze the tomatoes. Canning jar lids are expensive.

Yes, that's a good idea. I freeze everything, but now all of my freezers are full. So, I thought I'd try my hand at a different preserving method.

The purpose of canning is so you have food on hand. If the power goes out for an extended period of time, you’ll lose all of your freezer food.

Can you tell me more about what isn't good? Please explain how this is different than using fresh if the product is clean, heated through, kept hot, and processed for the required time? Once completed, there really wasn't much change in the consistency either. As someone new to canning, I would really like to know more details from you. How long have you been canning? Thanks
