As an experienced canner please always wash your jars before using them..they have a chemical, nasty smell. You did great in my opinion!

Thank you for doing this! Would love to see more re-canning videos. I think it is a great way to save money as well as smaller portions for 1 or 2 people.

I did this when making pickled beets. I bought no.10 cans of baby beets. Saved me from having to peel or take up garden space trying to grow enough. Worked great and no red hands 😊

I love beets! That's a great idea. Our stores don't offer very many #10 varieties.

I’ve heard advice to add vinegar to the jars to increase acidity to make sure they are safe in a water bath. Not sure how much for pints.

Are you saying to add extra vinegar even though the ingredients on the can include citric acid?

Yes…that was the advice I read. New varieties of tomatoes aren’t as acidic as they used to be. So to correct, just add a tablespoon or two of vinegar. Doesn’t affect the taste. @@HeartFilledHomemaking

i like that you say"re-canning" because people flip out about food in cans being "canned". They are, or they wouldnt be shelf stable.

As far as USDA it amazes me that it not approved as I just used Mrs.Wages Salsa mix to can a lot of salsa as I didn't prepare enough last season. It includes directions for using fresh as well as canned tomatoes. I doubled the recipe and mixed medium and mild for the perfect blend for my family. If it's not considered a safe practice can a company sell a product that can use fresh or caned tomatoes? The choice is yours, But do your research. Thanks for sharing. You have a new here.

Thank you! Welcome! I agree 100%. I plan on using canned tomato sauce to make pizza or spaghetti sauce to can. That's the same thing.

I haven't done tomato juice yet, but I believe as long as all of the steps are followed and the required acidity is in the juice, it should do fine.

I love the idea of it. In my research, I found this method has been followed by a lot of people. But you have to stick with what makes you comfortable.

@@HeartFilledHomemaking I've tried canning garden tomatoes, and both times they turned black, so my mom canned some for me, little did I know she put sugar in them, yuck. So I don't bother canning them anymore and since I'm the only one in the house that eats them I just buy a can when I need them.

I would just freeze the tomatoes. Canning jar lids are expensive.

Yes, that's a good idea. I freeze everything, but now all of my freezers are full. So, I thought I'd try my hand at a different preserving method.

The purpose of canning is so you have food on hand. If the power goes out for an extended period of time, you’ll lose all of your freezer food.

Can you tell me more about what isn't good? Please explain how this is different than using fresh if the product is clean, heated through, kept hot, and processed for the required time? Once completed, there really wasn't much change in the consistency either. As someone new to canning, I would really like to know more details from you. How long have you been canning? Thanks
