When you buy those giant cans, you can also use the whole can and make a large batch of whatever you use tomatoes for…chili, soup, casserole, etc., then freeze or even can the finished product in portion sizes for your family. I like having ‘ready’ meals in my freezer. If I’m sick or busy elsewhere, I can just put the portions in the oven, instant pot, microwave, etc., and everyone still gets a good meal. Also, some of those things can be dehydrated for longer storage.

Good idea but I’m trying to get away from storing a lot of food in my freezer. In Florida we have had hurricanes that cause power outages. One hurricane power outage lasted a couple weeks and everything in my freezers ruined. Now I’m canning as much as I can. Even meat.

Sliced BLACK Olives are great to can. I also can Dill pickle relish. Ketchup, bbq sauce, mustard are a few of the foods I have recanned.

This was fun. I recently recanned six #10 cans of spaghetti sauce that my daughter brought home from work because they were dented and about to be thrown out. I've also recanned large batches of nacho cheese sauce though I know this is not considered safe practice by most people. Today I picked about 30 pounds of tomatoes from my neighbor's garden and will probably freeze most of them until I decide how to process to them. Looking forward to watching more of your videos ;)

I love this video! Thanks for taking the time to make it! I've been trying to figure out if I can recan fruit cocktail. Fruit is so expensive, and the #10 cans of fruit cocktail is pretty cheap, relatively speaking. I'm just not sure if water bath canning would work or pressure canning would be better, and when recanned, does it come out good or mushy. I believe it should have enough acid, so I should be able to water bath. I just hate to spend money to have to throw it out.

I've done this with tomatoes a few years ago and worked well. When I wanted to do it again this year I calculated and from my sources (Sam's, Walmart) it's cheaper just buying the regular size cans. But it IS cheaper to buy diced tomatoes and Mrs Wages and can my own salsa. It would be cheaper yet if my son liked salsa made from garden tomatoes.

Hello our stores here Juneau Alaska doesn’t carry those tomatoes and Amazon don’t have the # 10 cans. So I ordered 4 each of the 28 ounce cans of each of those. Live alone so they will last me awhile.It’s to expensive to order from Walmart and have it shipped up here,our Walmart closed down almost 4 year ago. I Think I maybe in a couple months I will order more so it can last me through the winter. Will be canning them tomorrow.

The forejar lids are great if you want them in Canada to avoid the shipping best to buy on Amazon they really are worth it. I just did my first spaghetti sauce no meat I went to market and got them from the minonites not one bad tomato in the lot. One question about the re canning should we add lemon to the jars before?

@Penny-jj4li I hope you see this post even tho you asked the question about lemon juice. I prefer to add citric acid, to avoid any taste change, but you can certainly use lemon juice. I do it with ANY tomato products, fresh or store canned, just out of caution that all tomatoes aren't acidic enough these days. Happy canning!

Hi I like this video and will can the same type of items, canning items that are approaching their code date, and or good sale price or I want to include that ingredient my pantry and transfer them into smaller , say pint bottles. I’m a widow so this would save me $. Would you please do a video on refrigerator sweet pickles? Or cucumber chips? You did a video with both dill and the other one but I can’t find it. I bought the cucumbers, the variety my grocery has were ‘pickling cucumbers’ so that’s what I bought. I did ask for the Persian cucumbers but the store person did not know anything about them. Interesting concept, but canners do need to be aware of the costs of re-canning foods. Aside from the fact that it's not a wholly approved canning method, cost comparisons should be carefully calculated. In my area of west central US, Member's Mark tomatoes at Sam's Club are priced at $4.98 for a #10 can, which will fill 6 pint jars at about $.83 each which seems like a good price, as Great Value tomatoes at Walmart are $.96 per can. However if you are canning with single-use lids [Ball regular mouth from WalMart], you need to add about $.30 to the cost of that pint of tomatoes, so the savings evaporates and the re-canned product is more expensive than the store brand. For Jars lids cost even more than Ball at about $.35 each. Using Tattler lids would eliminate the lid cost, but they are a big investment to get into for canners. Just info to consider.

I couldn't find where you said how long to water bath can them, but my Bernardin canning book says water bath can pints of whole tomatoes for 40 minutes. Would you agree?

I've canned green tomato slices twice now. I've used pickle crisp in each jar to help them stay more firm. That wasn't in the videos I've watched for this process, but I tend to add that to a lot of veggies when I can them. I haven't tried the green tomatoes yet, but for what it's worth, if you have some tomatoes that have started to blush and you add them here & there, the jars are very pretty! Happy canning!

Hello Marilyn, yes I have dehydrated tomatoes and sometimes the tomato skins. I then run them through my food processor or blender to make a powder which is really good added to soups and stews. Cheers, Colleen

Hello Julie, Green beans are a low acid food so not considered safe for water bath canning unless you water bath them for a long time. I have water bathed green beans but its not my favorite way to have them.

New subscriber here. I bought 2 large jars of salsa (64 ounces each). There's just 2 of us now since the children moved on. We can barely get through a smaller jar of salsa in the store before it goes bad in the fridge. We use it mostly on tacos or taco dip. I planned to recan the salsa into 8 ounce jars. Buying the large containers is cheaper than making my own or buying a bunch of smaller ones and waste about half. I haven't done it yet because I wasn't sure about the safety or if I should water bath or pressure can. I also follow Rosered. Did you say it's only safe or effective to recan with water bath products? Thank you for the video. I look forward to looking through your previous (and future) videos for information.

Hello Cathy, Thank you for subscribing, im really happy to have you join us here. I'm sure that these recanning projects can be done with a pressure canner but I do them with a water bath canner for simplicity. We are in the same boat, just 2 of us here and even a regular can or jar can be too much for us so it makes more sense to buy the super big ones and cqn them in sizes that are better suited for our needs. Btw, it's recently come to my attention that tomato seeds and peels contribute to inflamation that acerbates arthritis pain, but you can buy "tomato filets" in#10 cans, which i think is just tomato flesh packed in tomato juice...om gosh, for sandwiches, for pizzas, for casseroles! And you get the juice, too! Don't let them know, the price will triple! If we could re-can this... Please, God, let it be so!?!?!

I don't know, that isn't something I've ever tried to recan. I would guess no because you have to heat the ingredients to boiling and then hot water bath for 30 minutes. I think that would break the mayonnaise down. If you find out please let me know. Cheers, Colleen

I wish you would do me a huge favor….scoot your pig cutting board out so we can see the whole pig. Please. I have a pig cutting board that a fellow who used to work with my husband at the Martin Creek Power Plant…or maybe it was at the Stryker Creek Power Plant. It is, I think, a duplicate to the one you have. I had a friend who had one that she had had about 50 years and I wanted one so she drew around hers on tissue paper and mailed it to me and Thespis talented fellow used it as a pattern. Mine just hangs on the wall looking cute…but I would love to see the rest of yours. I understand that back in the late 50’s or 60’s this was something that high school wood shop classes made and sold. Most high schools in Texas, our part anyway, do not have home ec. or any of the shop classes that were available back when I was in high school. Thanks!

Normally the #10 cans of tomato’s are canned with citric acid in them already no need to add anything
