Carrot Cake Recipe
2 cups S/R flour
2 cups sugar
1 teaspoon bicarb soda
1 teaspoon salt
1 teaspoon cinnamon
1 + ¼ cup vegetable oil
4 eggs
3 cups grated carrot
Mix first 5 dry ingredients in a large bowl.
Add oil, eggs and carrot to dry mix. Beat together well.
Bake as muffins or full cake at 180˚C. Full cake will take 40-45 minutes to cook.
