I did pressure can some hominy. Bought the #10 can for $1.50. Texture of re-canned hominy was the same as when it came out of the big can. Never tried any other veggie. When my garden doesn't produce enough beets for our family, I take #10 cans of beets, pickle them and can in water bath.

I will re-can the green beans. My son gets #10 cans of them from the food panty and he hates green beans. I re-can (pressure canner) them in 24 oz jars. I like them soft anyway and I when I can them from the garden, I keep the ones that had a seal failure and reprocess them a 2nd time and they always taste fine. Today I am re-caning tomato sauce from #10 cans, that I got for free because they are a month past there best used by date.

Thanks so much for a nice clear, concise explanation of the principles behind re-canning, Tessie. I'm hoping that there's no economic meltdown or other disaster, but even if there's just a big snowstorm this winter there in PA where you are, seeing you there in your pantry, we know that you'll be good to go -- as will your whole family!

@TXJan0057
@TXJan0057 3 жыл бұрын
@@dsa2591 its actually the opposite think of pickles they are very high acid and are water bath canned. The problem with many tomatoes now is they are not high enough acid so you have to add vinegar to achieve the proper ph for water bath canning.

Good job tessie been enjoying viewing and learning about you and your many talents....I have been re canning for a while and learned how to can applesauce, pear sauce and number 10 cans of pizza sauce. We put pizza sauce in pint jars. Already seasoned so no need to make pasta sauce. I can like they did during World War One. They heated things in a pot and heated their cleaned jars in a 225 degree oven, then canned the items. It is not approved but I never lost anything....

I havent re- canned yet. At my local grocery store this week, they had all their canning lids ( regular and wide) and the boxes of wide mouth lids with rings clearance 44 cents!!! I asked the clerk to check the price, thought it must have been an error. The small ring's are normally $3.49 for 12 and the wide mouth ones are $5.00 for a box of 12 rings and lids.!! I was excited to get such an unheard of price.
