Tessie, I have been canning for over forty years. I always saved glass mayonnaise jars, jelly jars, Marinara sauce jars, etc. I have never had a problem with reusing glass jars. If a ring will screw down on the threads, it can be used. I know that the "authorities" don't recommend using anything other than canning jars, but I was raised to use what you have. I have never had a commercial product jar break on me. They seal just as well as Ball, Kerr or Mason jars and I have tried them all. Now they put mayonnaise and Marinara sauce in plastic jars so we've lost those as a resource for jars. But you can still find some products in glass that can be reused for canning. I have never tried reusing the jars with the button tops like you were doing today, but I always wondered if you could do that. I look for jars at yard sales and Thrift stores too. Be sure to feel the rims for nicks before you buy them. When I was a new bride some forty odd years ago I was just starting out collecting jars. When people found out that I wanted to can, they started giving me jars. People would haul them out of cellars and basements glad to "get rid of them" because canning had gone out of vogue. And I was happy to have them. I still have them and use them. I inherited my grandmother's pressure canner, an antique now, but I found my modern canner at the end of a yard sale day, used once in the box, for twenty bucks. The woman had bought it and then decided she really didn't want to grow a garden and can. It was my lucky day.

that's so beautiful to hear!! I love canning..I am now 62, not in the best shape from back surgeries but I still do the best I can..and dehydrate, that's easy....I love hearing people tell of when they were younger and what they did ...It always brightens my day!! I wish we still did things alot of the old ways ..ever since we got all this technology the world's gone mad ,but some people still live good quiet lives and do everything they can to be useful and use what is useful!!

Jessica, you know that you have a good seal when the center of your lid is depressed. After you remove jars from your hot water bath or pressure canner and sit them down to cool, you should audibly hear a pop as the jar Seals. If you don't hear them pop, try pressing with one finger in the very center of the lid, if it goes down when you put pressure on it and pops back up when you remove your finger, the jar didn't seal. If the center is down and stays down when you press on it, then it is sealed. Remember that it might take a few hours for some jars to seal, so don't worry if it's taking longer than you expected.

5/22/2023 Thank you for such an excellent instructional video. Can I suggest to you and all that use water bath canning to place a flat plate on the rack (I use my pressure canner cooking rack to keep jars from dancing all over the place) I’ve been re using jars from store bought items and they are better as their compound seems of good quality. And the variety is amazing. You already paid for them minus well re purpose so it doesn’t end on a land field.

So, if I'm getting the overall principle down correctly, Tessie, the important factor that makes this so practical for the average household is that we're moving the food from larger (usually) metallic containers into smaller glass (that *glass* part is major) containers? That makes sense to me! I love the idea of taking a look at a whole set of rules, examining them one by one and saying: "In my situation, does that really make sense?" Followed up by: "Is there a way I can get this job done for my family and still keep them safe?" If the answer is yes, go for it! Hurray for rebel canning! Glass makes such a difference. I remember that when I was a kid, we would occasionally buy orange or grapefruit juice in metal cans. All I can say is "Eeeewwww!" That juice had the strongest metallic taste! When I tasted those same citrus drinks from glass containers, there was a whole different quality to it. Enjoy those rebel canned goods, Chevy Man and Tessie!

Tessie is such a rebel. 🤣🤣 You are correct in saying other countries do it different and it works for them. Generations have done rebel canning. Who made that name up? Just because they have a fancy name, doesn't mean the NCFHP has it all right. Respect, Tessie. 💚🌞

Rebel canning covers a wide range. Some youtubers do things that are asking for trouble and then laugh at those who follow safe principals. I love that Tessie is very clear when she deviates. It's so much more helpful to those that are learning and trying to understand the whys of canning.

So I did what you recommended and recanted the tomato sauce into spaghetti sauce and it’s the best I ever made! In the end it worked out☺️Thank you!!! I never would have known you could do that!

I'm a safety canner almost all the way BUT summer before last when jars were nonexistent, I broke all kinds of rules. We may not always have the luxury of being super safe. I love the way you are very clear when you deviate from the strict USDA standards. I have always canned mostly meat and did have some breakage of mayo jars. So I put them in a box, but everyone of those came out and got filled when I had no choice. I avoid using them for long processing times when possible, but they are all full now. Thanks for sharing your heart with us and showing us what scriptural contentment looks like. You encourage me everyday!

When I first began rebel canning I would use mostly new and add one or two rebel jars so that if the rebel jars failed, I would only have one or two jars in the fridge to use quickly. What I found was that commercial "lug" lid jars gave a very nice, loud ping and seemed to have better consistency with sealing. I now prefer lug lids to traditional two piece lids. I love rebel canning and like to get familiar with the process before I have to do it out of necessity.

I buy large cans of tomatoes in January for 99 cents a can. I portion out into recipe size containers, then freeze in containers or plastic bags. So much less waste now!

I have only been canning about 5 yrs maybe. At first, I was by the book. I have since become more knowledgeable and self assured and definitely reuse commercial jars (jelly jars, etc). I don't share those as I feel that person may freak out if they notice. I scrape the labels off with a widget razer blade I keep next to the sink just for that purpose. Great tips!

❤️❤️❤️TESS…PLEASE READ!! ❤️❤️❤️ You are so full of knowledge and are kind enough to share it with us! Thanks for reaching out to us. I just don’t think I’ll ever learn canning …probably because I m so afraid of making an unrecognizable mistake and I’ll make my family sick. The way I do “savers” is by freezing in my Rubbermaid containers. Can I freeze in glass containers too? It just seems so much cleaner, and I have had a couple of plastic ones drop on the floor and crack open. Thank you again for any help!! 🙋🏻‍♀️🥰😘 With much love, your friend, Teri ❤️❤️❤️

Hi Teri yes you can freeze in glass BUT do not make it totally full and it has to lay on it's side till it is frozen to leave expansion

Have you ever been to Reading China and Glass in Lancaster? They have lots of those Italian canning jars, I’m not sure if it’s the same brand you have but they have a huge variety!

Tessie, this is so helpful! Maybe you or your viewers can help me. I buy glass pasta sauce just so I get the glass jar to use, BUT we have septic and can't let grease go down the drain so they end up being used to hold the grease and fat. Have people found another way to store fat that doesn't use glass jars? The hot grease burns through the plastic jars. We want something with a cover in case it ever gets tipped.

I use plastic jars or baggies. I let the fat cool down overnight than use a spatula to get it into bags or jars

The tomato sauce here in my neck of the woods is 6.00 a can. Unless I can catch it on sale for me it's not cost effective.

Use the top of a vinegar plastic just cut off the bottom the size you want. I had too do that for my jelly& jam jars. And juice bottles.

I can using any kind of jar I can get my hands on, whether it be small cheese whiz jars to lug lid jars and have literally had 100% success. My fails always come from new flats. I also pressure can everything and the jars hold up just fine. I think once you know the basics you can make that decision for yourself. 😊

I also buy hot fudge & Carmel tops. And those jar just like a canning pint jar and resealable lids. And cheese sauce jars. I like them for the sliced bun size pickles cause they can be cold water bathed.
