I use old dark socks to keep jars dark. I just cut off at the heel and use the leg part to slip over the jar. I also adds a little cushion protection for the jar.

I have made my own maple syrup for many years. Here’s a little tip. You will be told to skim the foam off as it is boiling. That foam is the minerals that the tree has brought up from deep in the soil. I always stirred it back into the syrup. Yes it makes it cloudy but will not affect the taste. ❤️🇨🇦

I swish a pine branch through the syrup when it foams up.. The oils from the pine cause it to go down.

Okay. So I get my honey from a local person with bees; he sells in regular canning jars rather than the more expensive, "trendy" plastic containers that some use. Its a lifesaver! Maple syrup is also local, but it is in plastic bottles so I'm gonna have to transfer it to jars. I buy molasses in gallon plastic jugs as well, so yep ... glass it is! This has been a very eye opening video for me! Thanks 😊

I store a lot of my canning jars in Brown paper bags.. a lot of us don't have access to dark room..and I feel like that will keep the light out... I get mine at Walmart there's a 100 and a package for less than $2

For years in an apartment, I kept my canning jars in cardboard boxes in the dining room. Kept the jars in the dark, kept them dust-free, and kept them organized as well as any pantry. It was also easy to move them all when it came time to leave that apartment.

@@monstermcboo7282 I can relate. Some of my jars of preserved food are also in my dining room, my hubby isn't too happy about that though. So I'm working on adding more storage to a different room which we don't use so much.

Another great public service announcement by Heidi. Love your videos. I purchase my maple syrup (and honey) from a neighbor and fortunately he uses glass. If not I'd switch over from plastic as soon as I got it. As for honey if you are using it for allergies it is best to purchase it locally as allergens native to your area you live in is the best results. People should be careful when purchasing it in stores. Some jars will advertise pure honey and after doing research the cute little teddy bear plastic jar along with the honey is actually imported from C h i n a. As for Food Savers. I use ours only for the vacuum for my jars. Everything goes into glass in our home. Thank God for the 200 jars we purchased at a yard sale a few years ago for $20. Keep up the great videos they are very much appreciated.

Yep, local honey is best if it is available. Hard to find around here. There are some people that keep bees but the demand for the honey is high so it can be hard to get

*TIP* So you don't have to hold the tip in place, leaving both hands free to work the brake bleeder: 1- Take the hose from the Food Saver jar kit, and cut it shorter, to keep the overall length of the hose down to just what you need. 2- Insert the tip of the brake bleeder hose tightly into the food saver hose. 3- That's it! You have a nice splice and are now free to snap the food saver hose tip into the jar adapter, the way it is meant to attach, and you can use both hands to work the brake bleeder, without having to hold the tip into place. Just remember to keep the larger diameter hose shorter and the smaller diameter hose longer, and the overall hose length as short as is workable, because the smaller and shorter your hose is, the less you have to work the brake bleeder. Make sense? Thanks so much for introducing us to the brake bleeder! I hardly ever even get out my food saver, anymore. Hope this helps make it even easier. I'm loving the process, now that I don't have to hold that tip in. I'm doing my home dried herbs and herbal teas now, and there's a lot of air to pump out of a lot of jars. That's why I spliced my hoses to free up both hands. Never going back. 🤗

All of us around here had an issue with our maple syrup last spring. Every single jar crystallized to the extreme. Never saw that before, although we are fairly new to it. Neighbor that has been sugaring for decades said it just happens some years. I don't mind, I will have syrup and then maple sugar for cooking!

Since I have been using the brake bleeder to seal my jars my jars seal so much better. And this is how I store my meats right now -after- dehydrating. I lost 1 seal out probably 50 jars and it was in fact due to my own mistake of filling the jar too full. Will be doing the syrups this weekend. Thank you so much Heidi . HAve a great day everyone ! 💞

You have added to my list of tasks for this winter. I'll be shifting my honey and maple syrup into glass. I inherited a LOT of mason jars from mom so I think they're gonna come out of the garage... at least long enough to clean, fill, and seal. However, I have a bunch of prepped clementine and orange peels in the freezer to deal with FIRST. Time to make marmalade for Christmas gifts (and fudge). Think I'll add some finely minced candied ginger to the recipe. Ought to be good. BTW - Thanks for the advice on the brake bleeder kit. I had vacuum sealing lids from mom's food saver, but the food saver itself is on it's last legs. Now, those lids will actually be useful.

It is always preferable to use you vacuum chamber to vacuum seal your jars. Even the food saver will only create a negative pull of about 15-18 inches. The Vacuum chamber will easily do -25 inches in half the time.

I had maple syrup in a glass jar go moldy in storage. I skimmed off the mold but the rest still had an off flavor. I contacted a local maple place and they suggested heating the remaining syrup up to 180ish degrees and repouring. So it can go moldy but is still good but it needs the heat to make it usable again. I have some gallon containers in the freezer in plastic :P Have it thawing to put in jars.

Are you going to heat it when you put it jars so the lids seel or vacuum seel? I've poured mine into smaller jars and they molded. So I'm curious if getting them to sell will prevent the mold. I skimmed the mold used it without issue. I didn't notice an off taste, do maybe mine wasn't as moldy.

I also have had maple syrup go moldy after pouring into smaller jars, twice. Next time I will definitely heat it to a rolling boil first, and use sterilized jars and lids. I'm hoping that will be enough. And once a jar is open it needs to be refrigerated, or it most definitely can start to mold.

I am a food chemist/microbiologist and i 100% agree with your steps. The plastic allows oxygen to diffuse thru slowly which will oxidize the components of the food stored in plastic. This is NOT spoilage, it will however degrade the quality of the food from a taste/smell/texture/nutritional level. The food will likely still be edible but less good. Canning in glass, if done well and not over heated, will absolutely help prevent oxidation. Secondly is heat, all foods have enzymes still in the food. These enzymes helped the organism (animal, plant, fungi) to break down un-needed carbs, lipids, cellulose, proteins you name it. While alive the enzymes were needed and good. Once dead, they can "run-a muck" and they will degrade the quality. For every 10 degree C, enzymens generally increase activity by 2 fold. Lastly, light, avoid the light. I drape a tarp over my canned food in the cool basement as a light shield. Light will literally be absorbed by many molecules and can break them which changes the nutritional values but mostly changes texture/taste/smell. None of this is spoilage which is a microbial activity. Always throw away a swelled or non-sealed canned good. Don't bother trying to save the jar, its not worth the risk

I have been blessed to have my own honey bee hives, and, my family in Michigan and Tennessee tap out maple trees on the 2 family farms/ranches. I see both in the stores and they are not cheap at all. We only store ours in glass. I didnt know that maple doesnt go bad. I did know that honey never goes bad. Thank you for the great info. God bless.

We are from Vermont and store syrup. I never gave it a thought about taking it out of the plastic jugs and putting it in glass. I plan to do it now. Thank you once again. ❤

I like the fact that you mentioned keeping your pantry dark, I have a window in my pantry. It has floor to ceiling shelves on both sides, and shelves under the window. I have been think about putting plywood above the middle section to block the window (which means I can put in more shelves above the center part. I keep all my canned jars there. It also has a ceiling vent, so I can just close that off. I save juice and flip top bottles for syrups, oils, flavored vinegar... just because I love the look. Thanks Heidi!! Many Blessings!

@@guynorth3277 I love natural light too, but I'm talking pantry area only. It gets sun all day. I have a lot of windows in the rest of the house, and right now, all of my doors are open, but we spend most of our time in the second kitchen (I call the cottage), the greenhouse or the garden. For now, we are still on grid. Thank you for the advice though, it's greatly appreciated! Many Blessings!

I’ve seen a few people in your situation just hang a blackout curtain. Seems to work well. I’m familiar with them because I work nights, lol. Blocks about 99% of the light if you get a good one, most are insulated as well. 🙂

@@firequeen2194 I'm retired now, but I worked nights also. I taped aluminum foil to my bedroom windows to keep out light. A trick my Mom taught us as kids when we lived in Anchorage AK. No light gets in, it's very cheap, & worked great! I have shutters on my bedroom windows, and didn't want to add curtains over them. Thank you!! Many Blessings!

I make my own syrup and simply pour it in mason jars hot off the stove and put the lids on and let them seal. Then box it up for storage. I only open up one pint at a time and store it when opened in the freezer. If you leave it opened in the fridge, you will get mold at some point. I don't use a lot at once. If you buy it in plastic, pour into a pan and heat to boiling and go the mason jar route just the same.

I am VERY new to canning - has always made me nervous! but I want to get my syrup out of the plastic too! I have never had it go moldy in the fridge! strange. We don't use a lot either.

I can personally vouch for this one. I've experienced the same and will always boil and use sterilized canning jars and lids from now on when transferring from another container.

@@mchrysogelos7623 Mine probably molds in the fridge because it might sit there for a couple of years with me losing it in the back of the shelves somewhere. :) I figure maple syrup is kind of like jam or jelly as far as storage, but it's just as handy in the freezer (right next to the vanilla ice cream, go figure!) as the fridge, anyway.

If it develops black mildew all through it, you can bring it to a boil, skim the black gunk which rises to the top, then cool it and it's fine after. Store it cool and dark.

It was in the early 90's in Yankee magazine that we read about a co-op in Vermont that sold tree shares, which afforded us 1 gallon of grade A pure amber maple syrup. So that is what we started doing. We try hard to avoid white sugar, and use local honey as well as the maple syrup. We use the quart size amber Ball Mason jars for storing honey and maple syrup. Amazon sells 4 of them for $22

The only white sugar to avoid is that made from sugar beets because the beets are almost certain to be GMO. Sugar made from sugar cane is fine because sugar cane isn't genetically modified. I have several cans of pure refined cane syrup in my stash. Fun fact: my great-grandmother supported herself and family back in the day by making cane syrup. She would stand over an outdoor cast iron kettle suspended over a fire and stir it until it "made", then transfer it into jars and sold it, and it was prized for miles around. She died in 1940 to give you an idea how long ago that was...

@@joannathesinger770 The main reason to avoid all white sugar is that all the minerals have been removed, rendering a very high glycemic non-nutrient product. Calories, but nothing else. But it does sure really well, almost indefinitely, so can be a way to add calories to food in emergency situation. I have a few cans, but I hope I never have to use them.

I buy the raw honey in the bucket & immediately put them into glass jar for storing! I buy direct from a local Apiary!

@@RC-mn1ri Yes I agree an hour isn't so bad that good local honey is certainly worth the drive. My hubby & I have just been so busy we haven't had the time to take a drive like that although I would certainly enjoy the ride up into the country!

Do you have a camera in my kitchen? :-) Last week, I saw something was leaking on a shelf in the fridge. It was an old plastic jug of maple syrup - think from Costco. I put it in a canning jar. I will seal it and put it in the pantry now that I know and do the other jug too. I am pre diabetic and only use a tiny bit at a time - usually on acorn squash for supper. THANK YOU AGAIN! It is great to have this channel and you because you are real!

If the honey source is local, that is best type to buy. If you have Mennonite or Amish store nearby, they generally have raw honey locally sourced. They usually sell maple syrup & molasses & sorghum also. Off subject, the stores are also a good source of blocks of cheese to dehydrate. Another source of raw honey can be discount stores like UGO. Our local UGO carries raw honey in mason jars from our state. Also off topic, the Amish/Mennonite stores carry seasoning & spices. Sometimes they will let you buy bulk. God bless.

There are two other types of syrups you probably aren't familiar with: cane syrup and sorghum syrup, and both are staples in the south...probably because we don't have any maple trees to speak of. They each have their own unique flavor and health benefits, and sugar cane has yet to be genetically modified. My great-grandmother, who died in 1940, supported herself and family rendering cane syrup in bulk over an outdoor cast iron kettle suspended and heated over a wood fire until it "made". It was then transferred into jars and sold...a prized commodity for miles around.

I used to live next to where they make the Cane syrup and it stinks so bad lol. Everyone around here thinks it smells wonderful. I’m the oddball out. 🤪

TURMERIC: my success story: 1- store in garage in dirt or fridge (without dirt HA) during winter 2- grow in huge containers (long vertical roots) 3- use RAIN WATER EVERY DAY in morning. Must have good drainage. 4- 2-3 hrs direct sunlight max shade/indirect sun after 2PM ❤️ Your generous heart. TY! 👍🇨🇱🇺🇸✝️🙏❤️

Good morning Heidi thanks for clearing up the best by date on foods because I have always pushed the B B D way past there dates just for my own information and I have not ran into any bad food yet.just be careful about the food you try that with because all foods are not processed the same.

We recently got a 1/2 gallon of syrup from 2018, that had been stored in the original plastic bottle, in a very musty basement. The syrup took on the musty taste! What a waste. I’m in the process of repacking all my syrup into glass jars! Also just put in an order for a brake bleeder.

The plastic jugs tend to allow mold to form on the top of the syrup. Another reason to switch it over to glass. Be very careful about wet hands containers or utensils. even a drop of water in the syrup or honey allows it to ferment.

I was surprised to read several comments here of people complaining about mold, my thought was moisture getting in the bottles but did wonder if plastic could have been the culprit but none of mine had mold and the oldest one had been back there for very likely a year

I wash my jars on the sanitize cycle, but generally don’t use them immediately. So before using I stick them in the oven for 20 min at 200F degrees. I’m glad that I do that since reading your comment. Thanks!

@@RainCountryHomestead Interesting enough, I recently moved to Virginia from Michigan. The difference in things molding here versus there is quite significant. Much more and quicker mold in SE Michigan than here in Northern Virginia.

@@RainCountryHomestead It is quite humid here in Northern Virginia too but much less mold. Maybe because SE Michigan is built so close to natural wetlands and swamp? Northern Virginia, though hotter and humid, is in the hills near the mountains. I was continually fighting molds in Michigan, but noticed immediately that is less of a problem here. I DO think those plastic maple syrup bottles do not inhibit mold like glass does. I could not just scrape it off the top either, as it invades the whole jar or bottle. Used to give me stomach upset. And I am a maple syrup fanatic. Love the stuff. But stopped eating it in Michigan. No problem here.

Any time you store anything sweet, yes, ants can be a concern, years ago, before I started growing mints all around the house, we used to have an issue with ants but have not in quite a few years.

Lol...new to all this and I bought a 2 lb bag of activated charcoal...super fine, along with a bunch of bulk items, placed into jars with my saver lids and break bleeder, so excited I wanted to vacuum seal everything...well I learned my lesson with charcoal...what a mess came up through the break bleeder blowing in my face...all I could do is laugh at myself🤷🙄, so now I know!

I use 250ml flip top glass bottles, similar looking to the glass one you have there, we brought a load of them, years ago for Sloe gin gifts. We're Keto, so make our own Sugarfree Maple syrups & Chocolate or Caramel sauces. TFS, take care, & Happy Weekend everybody. ❤🙂🐶

When we went Keto, we had to go Sugar free on everything, we got our recipes from a great KZbin channel called Low Carb Yum, by a Lovely Lady named Lisa, she has an extensive website with hundreds of Keto recipes on it. I would very much like to make some maple sirup vinegar - have you tried that and if so how did you do? I have the maple sirup but I am not sure what the best way is to make it. I have never tried it but I would guess about 3/4 cup of maple syrup in a half gallon jar and add your water. You will likely need to add a starter if you are not using any kind of produce though

Thank you once again Heidi for good info! As I was watching the video I put my maple syrup into jars & vacuum sealed it. I keep mine in the fridge which also seems to help preserve. But if I wind up with too much syrup to fit in fridge, I'm glad to find out there is a way to make it better preserved on the shelf.

In my experience maple syrop is not very stable once opened. A got mold in mine once it was opened and inside a capboard shelve and in the dark. For example one has spoiled after being opened sometimes in September and I have just noticed mold when I wanted to use it a couple of days ago so in the middle of November. I had this issue before a few times. So now I usually store my maple syrop in the fridge once it is opened, except the bottle I have just mentioned. I have left it in the capboard since it was not hot anymore in the house and it was a small bottle, about 250 ml, but it has still spoiled rather fast.

I have always kept mine in the fridge once opened, habit if nothing else. but the vacuum sealing into glass jars should be no different than now it is packaged in plastic jugs as far as sealing goes.

I brought down and paid for the maple syrup in the plastic container, used some and when I went to use it again there was mold in it, so I read on the container and it says to refrigerate after opening. My question is does the sucking the air out make a difference? Thanks

Our local honey farm is very expensive so they suggested to buy a very large amount in a plastic container ,because glass jars are expensive ..And can it at home .But I have jars he is suggesting to freeze it .So far I haven’t done any thing I don’t want to take up my freezer space with glass jars of honey. What do you think? We have been substituting with pure maple in glass .we can buy good quality maple in Canada.,if nothing else it taste great for cooking.

There is no need to freeze or can honey. Using jar store in is fine but I would not can it as it is important to keep it raw whenever possible.

A bit off-topic, but you DID mention Misfits Market. We just got our first Misfits Market box and were very disappointed at how TINY some of the things they sent were -- 2-lb. pumpkin for instance and butter lettuce not much larger than a softball, sweet potatoes a third the size of usual. Even the onions were quite small. I wish they would charge by the pound~!

It depends on the item. Some items I have ordered if they are smaller in size, they send a higher quantity, if they are bigger, the send a lower quantity so with those items they are going more by weight but with pumpkins and such, not usually.

I purchased this chamber sealer from you last year .. Does it work better with some doors than others because I’m having trouble resealing some of the jars like a spaghetti jar or olives some of them sale on some of them don’t seal it’s kind of making it hard to actually seal so I didn’t know if there was a problem it is holding pressure in the chamber I do know that.

If the lids have become damaged such as dented along the outer edges or on the inner gasket, they may not seal. Because there are not many things I buy in jars, I can only attest to the few recycled jars I have used such as the recycled green olive jars and honey jars. I have not purchased spaghetti sauce in many years so I have no jars to test that on. It will also depend on what kind of pump you are using - brake bleeder or foodsaver type pump.

Hi there how are you just have another question, I have watched your video about the honey garlic and the black seed and after it’s fermented for three days Do I just go ahead and leave them in the jar like that for ever or do I strain out the garlic because I want to use this for my family and how often do you take a spoonful of it because my kids do not like the garlic raw is it OK to take the garlic out after it’s been fermented that’s basically what I’m asking also

The point of the honey infused garlic is to take it by the spoonful, honey, seeds, and garlic, all at the same time in its raw form to help prevent or cure colds and flus. Though you can strain it out and cook with it, that is really not the point of it.

I have been using the same ones (and I use them a LOT) for over 5 years now and have not had them go bad. However, last year, I still bought a back up set though I may give this to one of my daughters in law if they decide to get into vacuum sealing dried goods

I freeze my meat on a baking sheet for a short period. Then seal it, as it is, using my food sealer. I've done this for years with the meats I'm not canning and haven't had any problems.

I would NOT recommend aluminum foil as that has its own problems, parchment paper would be a better option

We do both and we go the old fashioned route of using butcher paper and have far better results as foodsaver bags can fail in the freezer. Or we can and dry the meats

You can see in the video I simply vacuum sealed. Not much different then how they were in the jugs. However, some do choose to can their syrup

I do refrigerate when I open them. Vacuum sealing into jars should prevent mold. If they an stay in a seal jar or bottle for a long time, why not a vacuum sealed jar? So far no mold

Indefinite? Beware! Check your syrup for mold! Not impossible and not fun! Best before 2024 Should have had another 2 years! Why then did I find out that it grew a leather SCOBY like layer on top that's already spored? I found out after AFTER I drank lots of it in milk and was lucky perhaps to only have had one day of vomiting and diarrhea! I didn't know that was possible! Take care everybody

My personal thoughts are yes, if you vacuum seal, it should not need it. I do refrigerate my open bottles though

This makes me really curious because I had some organic maple syrup that I had opened and tried keeping it on a shelf with my other stuff, but it grew mold and I had to throw it out So, I keep any unsealed maple syrup in the refrigerator now. I had thought since it had so much sugar it would not go bad...but it did. 😥 It was only on the shelf for at longest a month...so I don't understand why it grew mold if your doesn't...

Several have mentioned mold growth but I have never seen that. Maybe the type of syrup? Maybe there was water in the syrup? Maybe it is the temperature. Now I am feeling much better about vacuum sealing, that should prevent mold growth

I have a plastic jug of maple syrup that was never opened that now has a white film on top. It’s Best Buy date is 2023. Is it still good? I read that I can skim the top wasn’t toxic and can re can in glass but I’m a bit nervous…any suggestions?

I am sure it is fine. Especially with that best buy date. That white on top may just be the sugars crystalizing. I suggest pouring it into another container to check it. Sugars do not spoil.
