Omg can’t wait to go back to Taiwan next year and finally get your book 😆 I always have problem with heating heavy cream. The fat separates and floats to the cream surface. Did not boil the cream, just warm it to 40c and it will start separate 😮

Chef, what strength gelatin do you normally use? If it’s not powdered gelatin, could you please share how much one should use for powdered gelatin? Also, could you explain how to convert different strengths of gelatin to the one you use in your recipes? I have powdered 240 bloom gelatin.

He uses gelatin sheets, the brand name is Gold, from Germany,2 grams per sheet. Usually a sheet gelatin ranges between 190-210 degrees bloom, although the manufacturers do not specify it very well. The equivalence based on that value and using gelatin Gold is 2 grams of powdered gelatin. Other brands are equivalent to 1.5 grams. The higher the Bloom value, the higher the quality, since the higher the melting and gelation points, the shorter the gelation time and the shelf time can be longer without affecting the consistency. There is no equivalence between using the different bloom grades, rather its use is associated with consistency and uses, of course the more bloom grades you could use a smaller amount. The best thing, as always, is to try the recipe with the ingredients available in your area and make adjustments.
