I can't wait to make this for Valentine's Day! I found the pan on Amazon in that heatproof rubber material (It was a lot less expensive than the Nordicware pan). I make all my layer cakes in that type pan because the cakes don't dome up and brown too much.

I made this today, I didn't have the charlotte pan, so I used my mini tart silicone pans and made eight pretty mini cakes. I replaced the sugar with swerve to make it a little more diabetic friendly. Love this recipe!

I find if i whipp my cream and put it in the refrigerator over night it tends to get a bit milky looses the “whipped” cream not all of the cream but some, therefore the cake will get soggy. any others have that problem with the cream? Maybe it wont happen if its on the cake already. But i do like to add the topping right before serving.

Great question! All-Clad hands down are my favorites but they are pricey! So I’ve been slowly adding new ones to my collection as I can afford to. But they are truly worth every cent! The quality is just the best in class :)
