It's not really Tanghulu if you dont have an even number of fruits. The history of Tanghulu is based around gourds, which are the signature peanut shaped squashes. The Tanghulu represents that shape with two fruits stacked on each other. (You could also do 4 or even 6 or 8 as long as it's an even number)

Have you tried making Tanghulu out of rock sugar (or something like that?) I'm pretty sure there's a type of sugar you can use in the recipe that won't get browned and caramelized like regular sugar, so you end up with a clear, colorless, shiny shell of sugar. I think? I could be wrong lol XD
