➼ Easy brioche recipe
• Flour T45: 1000g
• Salt: 18g
• Sugar: 130g
• Yeast: 30g
• Whole egg: 300g
• Milk: 300g
• Butter: 300g
• Kneading: 4min at 1st speed + 6min at 2nd speed + 5min with the butter.
• Pointing 30min at room temperature make a flap and place 10h at 4°c.
• Divide at 50g and ball
• Relaxation 15 mins
• Shaping
• Primer: approximately 2h30 at 27°
• Glaze and blade
• Baking: 30 min at 150°C.
• Penetrant testing on grid

• T55 flour: 150g
• Butter: 120g
• Brown sugar: 120g
Strawberry insert recipe:
• Strawberry: 480g
• Agar-agar: 6g
• Sugar: 12g
Vanilla pastry cream recipe
• Liquid cream: 42g
• Whole milk: 235g
• 1 vanilla pod
• Caster sugar: 50g
