Your skills will continue to see you succeed in your amazing business..my son is also a qualified Baker / pastry chef but chose another profession because of the work hours. He is also a Dental Prothetist. Two trades before the age of 28. I miss my pastries..🥖🥐🍞🫓😍❤️🇦🇺🦘

What kind of oven is that, with the loading platform? (I can only guess it is very, *very* expensive! O_O ) How early do you have to arrive before opening? Used to work in a much smaller bakery, with only maybe half a dozen items, and we had to have at least one person in at least 2 hours before we opened, just to get the first few batches of product ready. I can only imagine this takes a lot more time.

Il suffit tout simplement de diviser les quantités et ajuster selon vos besoins, n’hésitez pas ça marche très bien même avec une demi demi

Merci beaucoup pour la recette et les explications . J'ai les faite plusieur fois mais avec de la margarine a la place du beurre .à chaque fois en fin de pètrissage la pate devint colante et plus humide malgres que j'ai respectè les mesures de chaque ingrèdient .svp es que vous pouvez me dire quel est le problème ?et quel est la solution ? Encore merci et bonne journnèe.❤

One of my best friends is a master baker in England and I’ve just watched your video again with him, he was VERY VERY impressed with what you did and the standard of your baking and jealous of your equipment lol, He said, in England it takes 20 years to qualify as a ‘ master baker’ but you are already there , he thinks you are outstanding.

Young inspiring bread baker here, these are beyond phenomenal. The technique, the attention to detail is unbelievable. A lot of bakeries I have seen and worked in the USA don’t ever want to explore and expand their knowledge or perfect their techniques. It’s amazing and truly inspiring to see what passionate bakers can do.
