Hello ! I really must congratulate and thank you for sharing your recipe and technique. Its simply amazing and gives a lot of inspiration for us to try at home. A fear I've personally had is cooking the meat in the fashion you do....worrying that the rice would get severely overcooked by the time the meat gets cooked. I will however try your method. Could you share with me : 1. The timing of cooking on the stove and then what is next ? 2. The weight you have put on top of the cover. 3. You must teach us your special Hyderabadi Garam Masala recipe....knowledge is meant to be shared...many of us may never get the opportunity to eat from your delightful restaurant Thank you once again. Look forward to hearing from you.
