I love cooking seasonal vegetables and artichokes are at the height of their beauty, I prefer them to a bouquet of flowers! 😉
They lend themselves to being stuffed and filled in various ways, this is what I remember most from my adolescence, my mother always prepared (and prepares) them, with a stringy meatball filling that filled the house ever since she started preparing them of a good smell on Sunday, I assure you that the scent of artichokes and meatballs together is something indescribable, I love it!
Today I wanted to give you this recipe which I'm sure will become your "workhorse", then let me know if you liked it!
🛑 Tip: when you cook the artichokes, put enough oil and not too much water about 1/3 of the pan and cover them with baking paper and a lid (as you can see in the video 2:45) so a steam chamber will be created that will cook perfectly (without stressing ) the artichokes!
‼️If you are vegetarian or don't like meat you can leave it out and just use the breadcrumbs with the same procedure!
I used beef but if you want pork or mixed meat is fine too!
‼️ If you want to cook in the oven 👉 at 180° Static 175° Fan for 15 minutes covered then another 5 minutes

6 Artichokes
200 g minced meat
80 -100 g Breadcrumbs
1 Egg
2 tablespoons grated pecorino cheese (or other cheese)
Salt, pepper, parsley, mint
Extra virgin olive oil
Provola or caciocavallo
Lemon
