I love everything about this channel. The relaxed way of cooking and measuring (thanks for the metrics), the recipes, how you prepare everything in advance and show it faster for us, the music and that your son and wife taste test at the end. Due to the ongoing heatwave over here in Europe (no one has ac's in their homes) I couldn't really cook for months now .But first thing I will try when it finally gets cooler is the Pasta alla Norcina. I already bought the pasta for it. 🤤And then I will try all the other recipes. ✨

I do a Fusion style Italian/Mexican stuffed pepper that me and my wife really love ... I use Anaheim Peppers which are somewhat spicy and fill it with homemade Italian Sausage , topped with bread crumbs and Parmesan cheese and cook it all in a few inches of chicken broth ... then when it's almost finished baking , I add halved cheery tomatoes and if we have them sun dried tomatoes ... they are incredibly delicious and are perfect without rice because we typically eat them with rigatoni noodles or something similar

I make stuffed peppers all the time. One of my favourite dishes!! When I make the stuffing, I don't cook the rice or protein (diced chicken, prawns, minced meat) just keep them raw. I would also add diced fresh tomatoes, spring onions, parsley and coriander, spices and dried herbs (mint, oregano, dill) just to enhance the flavour. Oil too for a moisture. I will try it next time with cooked protein and rice, and I would assume the cooking time will be less.

Just got back from the store where I actually picked up some peppers and questioned if I wanted to make them. Decided to do over weekend. I have access to sweet banana peppers this year which I will use. You can also use that stuffing for tomatoes ... no sauce ... in the French tradition called "Tomates Farcie. The "sauce" would be a combination of meat juices, butter and white wine.... Italians also stuff those tiny red, cherry peppers... mostly for appetizers. Thanks for sharing. You are at 400K subscribers! Keep going, Dude ... Congratulations.
