I have been making this for years and my family would not eat Okra any other way, I also add some cornstarch or rice flour to make it extra crispy. Making it on a large pan makes it crispy.

You shouldnt turn the okra with a ladle but, with a suitable tong. You can turn and brown each okra easily and nicely.

The recipe seems interesting and certainly worth a try. Doesn’t the stuffing fall out though when you move the bhindi around ? I didn’t particularly care for the video specifically for the rushing water sound at the end. Thought something had gone wrong with my phone, it was so loud and jarring !!

If you are gentle with the okra the stuffing won't fall out. It wettens as the okra releases water. Next time I'll reduce the volume :)

Instead of deep frying, steam the stuffed okra for about 3 to 5 mins. It tastes good without the added calories of oil :)

But I haven’t really deep fried them, in fact avoided it as suggested in original recipe. Check the video again. And I am not sure whether only steaming would yield good results. But hey, if that floats your boat go for it.
