one of the best boiled briskets I've seen yet, you have that awesome looking smoker and I'd try to take advantage of it by smoking the meat for at least part of the cook.

Nice video man! I see a few problems as far as a comp brisket goes. Starting off your brisket is paper thin, on the flat. Ditch the mustard and use olive, or peanut oil. Step up your wood to a stronger flavor like pecan or hickory and use more of it. Thin blue smoke is awesome for home, so you gotta put a little more to it, I didn't see much coming out of your pit. Using the pan is fine, but cook th briskie naked with the Pan below till it probes tender. Wrap the nice barked brisket back up in

Leonard. I still have the Baby. At the time I also had a bigger Stumps cooker. I love the baby for small cooks. I’m not sure it’ll hold the amount you’d like to cook at one time. It’s always better to go a little bigger. I’d recommend the Baby XL. Great cookers though, you won’t go wrong.

Hi Joe, so now you've had the Stumps Baby 8 yrs and know it pretty well. Baby is smallest and next size XL Baby has almost twice the volume, will use more fuel and have longer recovery times. How do like this size smoker, wish you had the XL or really like this one? Stumps says you can cook 12 Baby Back Ribs, were they exaggerating? I might like to cook 3 to 6 things when I cook, couple BBR, Brisket, fancy smoked Mac n Cheese. Think for a single person this would be about right? Leonard...Thank You

did the high heat method work in competition? Im still not sold on it yet, mainly because of the bark and the fact i have to build a good size fire to hit 325-350

Why would you use a pan right off?? How is the smoke going to get into the meat?? I want as much smoke taste as possible. Smoke rising up and around the meat is where you get the smoke flavor. Not from a pan IMHO.
